Day 2 for not putting sauces and sugar on my meal

Wa it’s really a challenge coz I always just get commercially marinated meat and eat with rice or veges lol. I really didn’t want my meal to be sad by eating chicken with salt and pepper so I decided to marinate chicken with salt, smoked paprika, thyme and basil. It tastes better than I thought lol

Veges as a side were kumara, broccoli and courgettes :)

How I feel about day 2? I feel good during day time coz I don’t feel starving anymore. I usually feel like eating lots of carbs during meal time (or not eating for more than 5-6 hours) but I just feel little bit hungry during the day lol.

Anyways, yea looks more like a human food now 😝

Trying less sauce & flavourings DAY 1

Somebody said they stopped eating sauces and etc due to their health reasons and their body has gone way better (and lost a lot of weight 👀)

They just ate meat, vege and salt & pepper

I don’t think I can do that extreme but I wanna see how my body changes without sauces because I put so much sauces then I wake up middle of the night because of that reason and feel exhausted & feeling tired during the day.

Meal doesn’t have any sugar but I put salt, oil, and some soy sauce. It doesn’t taste as good as other meals but I think I feel better without sauces.

Anyways, im planning to do it until Sunday night. If anyone is keen, lets do it together lol

I don't really even like soup. I swear!

3rd soup in 2 weeks.

Leeks are cheap at the moment, so I made some leek and potato soup.

Bonus ham bone I found in the freezer for extra flavour. I also added a couple of birdseye chilli's (that got pulled out before blending) that added a surprising kick.

The baker was home sick today, but wasn't so sick she couldn't make a couple of ciabatta loaves and a batch of chicken stock.

Looking for trusty butcher

Good morning everyone, (picture of attention)

Girlfriend and I have had a stressful week and weekend last week so I want to cook her a beautifully reverse seared sirloin with good amount of marbling this weekend.

Does anyone have any butchers in Auckland that never fails them? I’m looking to get a 1.5inch to 2 inch cut.

Everything pantry granola

Feel like some granola and yogurt for a quick breakfast. No measurement or anything at all. Ingredients are nuts, seeds, dried fruits I can pull out of my pantry.

Usually it takes 25-30mins at 165c but this batch took longer because of bunch of a soaked fruits i put in.

Chicken and leek pies by request

My wife had a desire for chicken and leek pie, so that's what she got, with the addition of some bacon.

Used up some random pastry leftovers in the freezer - had just enough for 6 pies so a couple more meals down the track.

The filling was tasty but could have been just a bit thicker. Definitely not a hand held pie

Char siu

Attempted to make a char siu at home. Nailed the marinade but was in a rush and only got 4 hours to marinade so it lacked a ring where the marinade got into the pork.

Anyone have any suggestions or experience with making char siu?

Winter is here - time for French Onion Soup

2kg of onions made 5 smallish bowls of soup! It's truly amazing just how much they cook down.

My wife is sick, so I made soup. Actually, I was planning on making it since Friday when I grabbed a bag of onions, and she wasn't sick then, but it worked out well!

Started at lunchtime because I always have it on too low of a heat, and it takes forever (like 4 hours), but better than burning it by going too fast.

Bone Broth

I've been on the bone broth buzz lately after I realised I can ask my butcher for beef bones. I use it as the base for heaps of meals or sometimes just have with noodles. It feels like super low effort high reward kind of meal. Less than $10 all up, super nutritious and makes heaps.

Do you have any favourite low effort (or cost) and high reward recipes on your rotation at the moment? Or any cuts of meat you ask your butcher for that aren't typically out on the shop floor? I'm keen as for some new ideas.

Base veggies

Roast beef bones

Aromats

Chuck it all together

Add water and slow cook for twenty-four hours

Hotteok with cinnamon sugar & walnut for a KBBQ potluck

My friend wanted to do a KBBQ night at her house because winter. I was originally going to make a fun kimchi gochujang focaccia, but no one was covering dessert. Then I remembered I had some delicious brown sugar cinnamon hotteok at No. 1 Pancake (Albany) earlier this year. So I switched plans and made this instead, based on Maangchi's recipe.

Surprisingly, hotteok shared a lot of similarities with focaccia - yeasty dough, two rises, with filling added in the middle instead of on top.

Modifications to Maangchi's recipe:

· Made 10 instead of 8 / · Used more walnut filling (about 2:1 sugar to walnut, with a mix of ground walnut and chunkier chopped walnuts) / · Cooking time based on doneness rather than following the recipe's timing.

It was super yummy, and the middle was slightly less molten lava compared to the one from No. 1, thanks to the extra walnuts. Now I'm already thinking about what other flavors to try next time!

Photos include cooking up one to tasts first before making the rest and our KBBQ table (not including my Japanese friend's moreish Japanese potato salad cos she was late and the host's fish caught last weekend being smoked outside).

Quesadillas

Dinner request tonight from my wife. She made the guacamole which was excellent.

Beef mince with onions, garlic, capsicum, corn, black beans, tomatoes and tinned chipotle peppers in adobo sauce. Spices are ground coriander, cumin, smokey P, and a touch of cinnamon. Finished with a squeeze of lime juice.
