I'm looking for a steak topper recipe. I'm doing smoked reverse seared ribeyes for friends next weekend. They have told me they had a mushroom and red wine topper before that they liked. Please suggest how to replicate or do a better one that would blow their minds.
Stuffing was pepper jack cheese, cream cheese, green onions, jalapeños, fire roasted hatch chilis, and bourbon bacon onion jam.
1st attempt at smoking meat loaf and I decided to go with a stuffed one. It had pepper jack, cream cheese, green onions, jalapeños, roasted hatch chilis, and bourbon bacon onion jam.
Garlic herb seasoned tenderloin with blackberry rum sauce, fried taters with Truff hot sauce, and parrots.
Scraps became barbacoa. Still 5lbs of cheeks became 2.7lbs of results.
I made a burger sauce, and onion bacon jam sautéed with ghee, and added some smoked cheddar to top these bad boys. Buns also brushed and toasted with ghee. Topped with dill slices and tomatoes.
Opinions, comments, and tips welcomed. Smoked with maple bourbon pellets and two smoke tubes with 50/50 oak and hickory pellets and wood chips.
First picanha, smoked with hickory/pecan mix. Garlic green beans, maple glazed carrots, and potato slices cooked in meat drippings. Should I have rendered the fat more or trimmed before smoking? It was super delicious so I think it is okay. Just curious, any other picanha cooks out there with tips?
