આપણે બધાએ ગુજરાતનું પ્રખ્યાત શિયાળુ 'ઊંધિયું' તો ખાધું જ છે, પણ શું તમે ક્યારેય 'મટન ઊંધિયું' વિશે સાંભળ્યું છે?
બોહરા અને ખોજા સમુદાયે ગુજરાતની સ્થાનિક વાનગીઓને પોતાની પરંપરા સાથે એવી સુંદર રીતે ભેળવી દીધી કે તેમાંથી 'મટન ઊંધિયું' જેવી અનોખી વાનગીનો જન્મ થયો. તેમાં પરંપરાગત શાકભાજી અને મેથીના મુઠિયાંની સાથે ઘેટાંના માંસનો ઉપયોગ થાય છે. એટલું જ નહીં, આ સમુદાયોએ ગુજરાતી બાજરીના 'મુઠિયાં', ઢોકળાં, અને સુવાવડી મહિલાઓના સ્વાસ્થ્ય માટે બનતી શુદ્ધ ગુજરાતી 'ગોળ પાપડી' અને 'કાટલું' પણ પોતાની રોજિંદી પરંપરામાં હોંશે હોંશે અપનાવ્યા છે.
બોહરા સમુદાયની ભોજન કરવાની ઐતિહાસિક રીત પણ ખૂબ જ રસપ્રદ છે. તેઓ ૮ થી ૯ લોકો એકસાથે બેસીને એક જ મોટા ધાતુના 'થાળ' માં જમે છે, જે પારિવારિક એકતાનું પ્રતીક છે. તેમના જમવાની શરૂઆત હંમેશા રોગો દૂર રાખવાની માન્યતા સાથે ચપટી મીઠું ચાખીને થાય છે. ત્યારબાદ સૌપ્રથમ 'મીઠાશ' (ગળી વાનગી) અને પછી 'ખારાશ' (ફરસાણ) પીરસવામાં આવે છે, અને છેલ્લે મુખ્ય ભોજન લેવાય છે. આ મુખ્ય ભોજનમાં તેમની પારંપરિક અને સૌથી પ્રખ્યાત વાનગી 'દાળ ચોખા પલીદા' અચૂક જોવા મળે છે.
