Why does my game keep bugging on the skin changing UI? and my graphics keep changing without my input? windows [Bedrock]

for some reason, nigh every time I open the game my skin and graphics change to the default, how do I make it stop doing that? it ruined my world by loading 96 chunk render distance right before the update and making a bunch of chunks unsearchable for the new stuff

I want somewhere to store my OCs but I worry that I have too little to offer, I can hardly think of poses to be able to draw but if you have a pose reference I can try to draw a character. I think only furries would look alright if I drew them though
