Spaghetti alla Carbonara without Kimchi
I do love to toss fried kimchi in, but not this time. Still ate a little bowl of kimchi while I was cooking this to send shivers down the spines of anal Italian men.

Is the service at Daisies known for being like, really inattentive and slow?
I went for the first time a few years ago when they had just moved locations. Service was super slow, but we chalked it up to the team warming up to the new location.
Went last night to give it another shot, lo and behold same issue. I think we waited half an hour between getting our drinks served and the server coming back to take our food order.
Bad luck? I'm getting Wood flashbacks (except the food is way better than Wood's was)
Hi all,
I've had my 575 pro for a few years and I'm just sick of the porcelain-coated grates. What's the recommendation to replace them with stainless steel grates? Just don't want to overpay on this.
Thanks!
EDIT: To be clear, I'm using oven interchangeably with gas range. I know that's technically incorrect.
My friend is upgrading his oven. Nothing is wrong with his old oven , and it's better than my current oven, so I jokingly said I'd take it which has now turned into a serious consideration.
I've never really dealt with a large appliance hand-me-down situation before. I don't have a car, and I live on the second floor of a 6-unit brownstone 30 minutes away from my friend. I have measured the oven to confirm it'll fit where my current oven is.
Does anyone have advice for how to tackle this? I'd be happy to spend a bit of money hiring professionals to handle it, since the oven is free. But for that route, I have no idea where to look. For the DIY route, I feel woefully under-equipped.
Any tips or sharing similar experiences would be so appreciated!
Final pic is only a bit of the finished product, if that's not obvious. The rest is in vac sealed bags in the freezer, ready to sous vide whenever!
I cut one pork shoulder in half for more bark. Homemade rub. No wrap!
Spaghetti, pecorino, egg yolk, black pepper, pancetta.
I'm American, but I love making kimchi! One of my favorite uses for it is fried rice. I used the recipe from Kenji's "The Wok". This wasn't my first time making it, so I added diced pineapple as an experiment and it went well!
¡Hola!
