Brisket came out dry. It would shred and wasn’t able to slice.

It was an over night cook, so smoked for 10 hours at 200F until I woke up and raised the temp to 250. I pulled at 203 on one corner, 205 in the middle, and 207 on the other corner. I let it sit in butcher paper on the counter for like 2 hours then wrapped in foil. I cut at 157.

It was completely shredded couldn’t even make a proper slice and it was a bit dry.

What went wrong? I was avoiding to over cook in the night why it was 200F until I woke up.

Overnight cook 200F all night for 10 hours… should be fine?

Letting it run at 200F until I wake up tomorrow. Hoping for 160 when I wake up and then bumping to 250 for the rest until 203.

Any suggestions for avoiding hot spots. On the left hand side as it usually gets hotter near the chimney cap?

I was trimming it and it started getting warm quick out here. Put it back in the fridge for an hour to stiffen it up.

Nopales!!!!

I been eating a lot of vegetables lately for about a month. Asparagus, different types of bell peppers, onions and squash. Doesn’t really help me with bowel movements.

I threw in some nopales in the mix with the other veggies mentioned. Holy shit…. Bowel movements have increased and not having to force.

I just mix the veggies mentioned with cut up nopales with a little avocado oil. Pepper and Cajun seasoning and bamm. Hope it helps someone.

What was the last straw that made you stop people pleasing?

I been a huge people pleaser putting ppl before me all the time. As if I need their approval, and say so.

Recently I’ve gotten to a point where I’m just like fuck it, they won’t be happy regardless and all im doing is losing myself in the hopes of making them happy which never happens lmfao.

How to avoid hot spots, uneven brisket cookings?

First time I made a perfect brisket. Even-ish temps one side 206, middle 203, and other side 201.

Last run the temps were divided one side 203 and tender the flat was 170 and tough. I had to cut my loss and cut it down the middle and salvage what I could.

How can I avoid these uneven cookings? Or better them?

Nice guy, women don’t take me seriously. How did you guys become more assertive?

So I can keep a convo going. Be funny, a dick, etc. it’s the not trying to creep them out in the back of my head that messes with me to take that leap of faith and show interest.

I just had a couple meet ups with a girl. We went to a bar, chilled for some hours (until 2 am) talking, laughing, etc. we chilled again got some ice cream and hit a view. We started talking about men and women. How they can be. So eventually she mentions she can already tell I’m just a friend and nothing more.

I appreciated the honesty but it’s like the time and effort just to be told I’m just a really good friend type and nothing more just annoyed me. She said we can be friends and go out. I told her I’m good I’m looking for something serious not here to spend and entertain.

This keeps happening where I’m too nice. Any tips for this?

Beef tasting like pork?

I usually smoke pork in my traeger. Ribs, pork butts, pork chops, etc. I noticed recently when I made a tri tip it had a similar taste to pork/ham?

I haven’t cleaned the actual smoker. Just clean the grills and run it at 500 degrees for 10 mins to burn off whatever might be in there.

Any reason why the beef would be kinda tasting like pork?

Leased vehicle… 33k left. Buy it, or keep leasing or pay the 13k for going over the mileage?

A friend bought a Jeep 4XE 2021.

Still owes 39k to buy it. Trade in for another vehicle and still owe 16k, or walk away from the lease but due to going over the mileage would have to pay 13k plus dents to the body.

What would you guys go with?

39k I forgot about the state and taxes and document fee.

Stop breathing, fight or flight mode, anxious, question after question. How do you stay in the moment when approaching a woman?

I can be social, talkative, and decent at networking. Eventually i do get burnt out as sometimes I’m performing rather than being genuine and enjoying the moment.

It gets even worse with when trying to talk to women. I began over thinking, running lines I will use. By lines I mean, “hey how are you?”, “how’s your night going” etc. I start over thinking how I will say it, what words, how to walk over, etc.

By the time I do it I’m so tense, anxious and legit in flight or fight mode. I can only imagine what they see… it’s bad.

Any tips on approach anxiety?

For the people that have had social anxiety, how did you get "better"?

I've exposed myself to many social situations. Going to events, walking up to strangers and just talking about something we have in common. It goes fairly well but I notice I go into flight or fight mode. As I get nervous especially approaching women. I hope the convo doesn't die and start asking random questions and try to joke. When I run out of "material" I start asking personal questions which isn't great when youre first meeting someone lmfao.

Any tips on how to stay level headed, and not being too nervous when you walk up to someone? Coming at them with excessive energy I'm nervous AF.

I’m back at school later in life. I’ve met some great people but scared to over step at school. That being said I am older than most.

I’ve become an acquaintance/friend with someone who is younger. They are intelligent, disciplined and a go getter with their education.

That being said I find them very attractive due to this. I’ve noticed I think about them a lot and can’t wait to see them it’s getting bad. I keep over thinking it.

She is talkative when we see each-other but thru text is ehh. She rather ask her friend to ask me questions.

That being said she’s 25 and I am 35.

I know the age gap is big but I need to ask her out to dinner or something just to get rejected to get over this bs. I’m thinking about her too much.
