Hi Ridgewood friends, Jen and Kian here—the two-person team behind Arellano Pandesal in Queens.

If you missed us last time we’re back at KCBC this Sunday with  Grandma’s Roadtrip Chicken Sandwich, on our own pandesal roll.

It’s based on the sandos Jen’s lola packed for family road trips (because no one should travel hungry.) We pile chilled rotisserie chicken salad with sweet-and-sour condensed milk dressing onto a toasted pandesal roll. Each sandwich is made to order, with a dill pickle spear and Filipino atchara riding shotgun. $9 each.

Grandma’s Roadtrip Chicken Sandwich, made to order at Fifth Hammer this Sunday

We’re making Grandma’s Roadtrip Chicken Sandwiches to order from 1–5 PM this Sunday at Fifth Hammer. They’re $9 and come on a toasted, freshly baked Filipino bread with a side of pickles.

Our sandwich is inspired by the baon* Jen’s grandmother, Soledad**, packed for family road trips: chicken salad tucked into pandesal and ready for wherever the family was headed.

Our version drenches chilled, shredded rotisserie chicken in a sweet-and-sour condensed milk dressing before loading it onto the roll, with dilly pickle and atchara*** riding shotgun.

We’ll also have freshly baked pandesal rolls, available individually or in packs of four.

The pastry and dessert menu includes:

  • Death by Mango
  • Buko Pandan
  • Gluten-free Buko Pandan Pudding
  • Gluten-free Mango Sago Pudding

If you’re curious about authentic Filipino baking, we’re popping up at Fifth Hammer in LIC this month

If you’ve never had pandesal or real Filipino pastry, we’d love to be your introduction.

My husband and I run Arellano Pandesal, a small Queens-based bakery focused on Filipino pandesal, ensaymada, and sylvanas.

What makes us a little different from many Filipino-branded bakeries is that we don't do fusion. We’re not treating Filipino flavors as something to layer onto French pastry. We focus on authentic Filipino baking traditions, with the care and technique they deserve.

Our recipe comes from my mom’s childhood in Ilocos Sur, Philippines, and mine in Woodhaven, Queens. We bake everything out of a licensed commercial kitchen in Queens using a blend of four flours (including whole wheat) and high-quality ingredients.

We’re keeping things local this month, with plenty of chances to catch us around Queens:

Pop-ups at Fifth Hammer Brewing in LIC
Sundays: May 3, 10, 17, and 31st
1–4pm

We’ll also have Saturday pickup and delivery throughout May from our central kitchen in Sunnyside.

Plant lovers can catch us at the Culture Lab LIC on 5/24 during the Plant Market (free ticket required.)
