First Roll Attempt. Not Shapely.

Made some Eel Avacado, Tuna Avacado, and Tuna Cream Cheese (because fuck it).

It was much hard than expected. How do I get the perfect tube shape. If I press hard I get this oval shape. If I don’t press it falls apart. If I go inbetween it’s still slightly oval and sometime falls apart.

What am I doing?

Looking for the best Mackerel

I recentlyish had Mackerel sushi. I’m wonder who has a really good mackerel nigiri or sashimi in South Philly. Trying to keep it South Philly since we like to walk.

Looking for just a regular take out place or dine in that is a hyper expensive, and tough to reserve, Omakase experience.

Ginza has historically been my go to for sushi needs however they just don’t serve it.

Jameson 12 year.

Back in 2010-2012 era I was crushing 12 year old Jameson. At some point I kind of moved on to Ardbeg, etc. I was going to revisit my years gone by and they appear, at least in the United States, appear to not sell it anymore.

Is it rebranded or something and I am just out of the loop?

My buddy was saying a brewery is slated to open down in Pennsport where they tore down the factory and they are putting a Lidl, Shake Shack, Angelos setting up shop where Federal Donuts used to be, etc etc.

Anyone hear of this? If it’s true, which brewery? He was sparse on details.

Tuna nigiri is coming along. Using less rice per recommendation. Still not great but getting there.

The mackerel is our first try.

Fillets. Pins put. Salt packed for and 2 hours. Rinsed. Dried. Rice vinegar submerged for two hours with paper towel over. Pat dry. Wax paper wrap followed by plastic wrap. Two hour hold. Slice. Nigiri. It’s good but it’s not the same as several restaurants I’ve had. Is the rice vinegar solution more than just rice vinegar? Is it supposed to be more like the solution you add to the rice (vinegar, salt, sugar?)

To be clear, it’s way way way better than I expected for a first try.

Just got back from NOLA recently. Anyone know if our fair city has a Muffuletta offering? My initial thought what Khyber Pass since they style their menu as NOLA Cajun. No luck.

In South Philly, so ideally somewhere down here but for a Muffuletta, I will drive.
