3 times i haven't been paid correctly

Im a cook at a small restaurant and saying the owner is cheap is being respectful. 3 times now I've gone over 40 hours but he caps my check at 40. I honestly don't care about the time and a half but I want to be paid for the hours I've worked. What do I do? Grundy county tn
