How to respond to Muslim greetings?

I'm of brown skin but not Muslim (or any faith tbh) and often greeted by Muslims with "As-salamu alaykum".

I know what response is, but never used it as:

  1. I don't want to butcher it and offend.

  2. I don't know if it's ok to use it as a non Muslim?

I usually respond with hello with a slight bow of the head (I don't know why).

My question for Muslims, what is an acceptable response that will not cause offence given that I'm of no faith? I don't want my response to imply I am of any faith.

Please do not use this as an excuse to bash.
