I salt my steak and put it in the fridge on a grate for 12 hours. After I take it out of the fridge do I remove all the salt on the steak, or do I cook it with the salt on the steak, this is my first time trying this.

So I make spaghetti sauce once in a while. But I’ve never used tomato paste in my sauce, what does tomato paste supposed to do. Is it supposed to thicken the sauce, or add flavor to the sauce ?

When I look to purchase salsa, I notice some are mild , some are chunky, which I understand. Then I notice that some are listed as restaurant style. What does that pertain to. I see a mild,chunky,salsa. And a mild,chunky,restaurant style of the same brand, so what is different about restaurant style ?
