Just got hearing aids from the VA. Things I’ve discovered.

You don’t have to be facing the person who’s talking to hear them.
I did a lot of lip reading and secondary processing before I got them.
My brain reacts to things constantly in my ear by causing them to itch. (Intruder alert! Implement histamine response)
It reminds me of this every 4 minutes.
Plastic grocery bags make a lot of noise.
Putting a T-shirt on makes noise

Someone stole a slice of my pizza

On top of putting the sauce containers on the pizza, missing garlic butter sauce and fresh basil on the side.

Edit: It was delivery. I was refunded. They cut a slice out of a slice sometime between it being removed from the oven and the time it was delivered.

Beef belly

Just ordered beef belly from my local butcher.

Planning on some beef bacon.

Will use Instacure 1, kosher salt, and a little brown sugar. Will mix it all up, massage into the belly, then vacuum pack it and let it cure for a week.

After the cure, I’m going to dry it off and coat it with fresh cracked peppercorns and let it sit uncovered overnight in the fridge.

It will be smoked with pecan at 250° until it’s reaches an interior temp of 150°.

After that it’s back in the fridge to chill before slicing.

Has anyone made their own beef bacon? Any tips?

Beet salad with lemon and parsley, fresh yellowed beans sautéed with garlic and olive oil.
Rib roast.

500° two hour method rib roast

500° for 5 minutes per pound, then turn the oven off and don’t open for 2 hours.
I had to compensate for the oven by adding another 10 minutes at 400° including preheat time, but happy with the results.
Vacuum packed with Montreal steak seasoning for 48 hours.
