Rift 64 is grinding coarse, when set on fine-1

I detached the upper burr and reattached it and then replaced hopper with single dose hopper.
Grind is coarse and not fine.

Can someone recommend coffee beans for making espresso? Please note that I’ve never drank espresso. I want it to be flavourful, and I’ve no other preferences otherwise.
