I mentioned the survey we did of the coffee scene in 2021; got me thinking, we should do an update: 6 years later.

We did have a team from the 3 major cities, but I imagine with the community here, we can cover a lot more areas.

Economics of coffee recipes

Hello there.

As some of the community members might know, I got into coffee only because of a project that required studying the coffee scene of Pakistan.

Consequently, I got straight into espresso-based lattes. Now that I’m talking to more home baristas, I find that people don’t always like espresso, and one factor is that making espresso at home can be expensive.

Another factor I’ve seen the community talk about is the cost of the coffee itself. People have been looking to optimise PKR / gram of coffee bean / ground coffee.

Some recipes require more grams of coffee because they don’t extract as much from the grounds. For example, an espresso takes 18 grams for a double shot, but a Hario V60 takes 30 grams.

Now, my question is, are you looking at your recipes before working out your coffee bills? Or only people who overthink about coffee would do this type of calculation?

Need advice on copyrights for archival

Hello there.

Under a Section 42 company, we're doing a project archiving Islamic kalam, and making it available to the general public over a federated network.

Need advice from the lawyer friends of the sub-Reddit on the legality of this.

I can share more details if needed, but it's a typical archival setup.

Looking for volunteers

Dervaish is a platform to preserve Islamic kalam with (semi-)authentic sources and serve it in a modern format, while also shifting ownership of the media files to a federated network, instead of a centralised system outside of the hands of the people closest to the content.

It's a replacement of Spotify, YouTube and (potentially) Wikipedia, specifically for Islamic kalam.

In our approach, a kalam (the poem) and a rendition (a recording of it) are two different things. One poem may have been recited by many voices across many decades, in many cases with alterations. Consequently, the archive is organised around the text in its original script, with line-by-line transliteration and translation.

We started this recently, and I imagine this effort will never end. We need support with collecting audio transcriptions, finding sources for kalam's text, and time stamping the lyrics.

Specifically, we need assistance expanding content, write out & validate translation, transliteration, etc., and identifying writers & reciters.

The content means a lot to many people, across many traditions; hence, we keep a heavy hand on curation, requiring multiple people to do the same work to avoid mistakes.

The project is run through a registered non-profit (Section 42 company registered under the Securities Exchange Commission of Pakistan).

We also need advice from a lawyer regarding copyrights for such archival work.

Another experiment

I messed up, though. Should have kept it in reverse and then filled it after the time was up. Coffee came out too weak. It was more lemonade and less coffee.

I’ve been gate-keeping

There is a secret to the recent coffee photos I’ve been sharing recently. The reason they have that level of foam is only partially because of technique, the real reason has been the milk.

I used to buy diary barista milk from Esajee’s but they stopped importing it, and now they only stock non-diary barista milks.

In search for alternates, I’ve been trying all brands and types of milks.

What I’ve found is that Day Fresh milk, especially their Lactose-free milk produces the most, and the longest lasting foam.
