Cottage Pie

I only had half a pound of ground beef, so I supplemented the filling with lentils. Adding the lentils allows you to stretch a small amount of meat, and boost the protein and fiber content.

8 oz. of ground beef
1/2 cup of cooked lentils
1/2 cup of beef broth
1 can of carrots (I diced them since they were cut into coins)
1 can of peas
1 pack of instant mashed potatoes
1 medium onion
1 medium bell pepper
1 tbsp of flour
1 tsp of Worcestershire sauce
Preferred seasonings (salt, pepper, garlic powder, onion powder, chipotle powder, MSG)

  1. Brown onions and bell peppers until softened
  2. Add ground beef to pan and cook until browned and about 90% done
  3. Add the cooked lentils
  4. Add flour to the ground beef and lentils mix, and then stir until the flour is absorbed
  5. Add beef broth, carrots, and peas to pan and stir until the filling thickens and then remove from heat and let it cool slightly
  6. Cook the mashed potatoes per instructions and then let them cool slightly
  7. In a baking dish, spoon the beef/lentil filling on the bottom then layer the mashed potatoes on top
  8. Cook in the oven at 425 for about 15-20 minutes* to brown the potatoes

*Since the filling is already hot, it does not take long in the oven.

Salting aubergine/eggplant for ratatouille

My local grocery store has aubergine/eggplant, zucchini, and yellow squash on sale. I've been planning to try to make ratatouille, so I am taking this as a sign to try now. I know it is recommended to salt aubergine/eggplant before cooking to remove some of the excess water, but my question is:

When should I do it? Should I cut in big pieces and then salt it? Or should I cut it to my desired size and then salt it? Or does it not really matter?

Burnout, but not from the work.

Like so many people in this sub, I am getting burned out to the max. However, its not the company, or the work, or the regulations; its the consumers. They are getting lazier and lazier or dumber and dumber each day. I had a call earlier saying "You guys sent me an email. Why?" to which I respond, "What did the email say?" This person had the audacity to say, "How the hell am I supposed to know? I didn't open it!" After convincing them to open the email, it was a confirmation email for a transfer they set up.

I wish I could find me a job out of customer service, so I don't have to deal with people anymore.

This is one of my absolute favorite moments in the series (that isn't an emotional gut punch, here's looking at you "My Screw Up"). There are so many times I wanted to strangle the characters on the show, and when someone finally says how they feel, it gave me a cathartic release.

Turkey Taco Sweet Potato Home Friees

1 sweet potato, peeled and diced
1 lb of ground turkey
1 taco seasoning packet (I used low sodium)
1 avocado
Shredded cheese (I had sharp cheddar)
Greek Yogurt (you can use sour cream)
Seasonings you like (I used chipotle garlic seasoning, onion powder, cayenne pepper, cumin, salt, pepper)
A little bit of water
1 lime
A little bit of oil if your choice

Sweet Potatoes:

  1. Wash, then peel and dice your sweet potato. I did a smaller dice than intended, but it’s ok.
  2. Coat the diced sweet potato with a little bit of oil and then season to your preference.
  3. Place potatoes in a baking sheet (line with parchment paper/ aluminum foil or in the baking sheet itself). *for crispier potatoes, place a wire rack in the baking sheet and place the potatoes on top)
  4. Bake in a preheated 400° over until done (approximately 30-45 minutes)

Turkey:

  1. Brown your turkey in a pan for about 7 minutes
  2. Add your taco seasoning and water as directed on packet and finish cooking.

Guacamole: (this was a bare bones guacamole as I didn’t have everything I usually use)

  1. Cut your avocado and put in a bowl
  2. Add garlic powder, onion powder, a heavy pinch of salt, and the juice of half a lime. Then mash it all together.

The final product:

  1. Put the potatoes first then cover with the turkey. Top with the cheese, a bit of the guacamole, and a dollop of Greek yogurt. I squeezed the second half of the lime on top of the turkey before I added toppings.

AT&T Internet Air

Looking to get some feedback on people’s experience with AT&T Internet Air from a more recent period. All the ones I see on here are old.

I live in an apartment complex, so my only options for internet is Cox or AT&T. My internet crashes on a regular basis, and I’m tired of it. I can switch to AT&T for almost half the price, but the speed is 300 Mbps compared to Cox’s 500.

Basketball Courts in Lafayette Parish

I was looking to shoot hoops other day, and I could have sworn we had more parks with basketball courts than I found. I would go to the rec centers, but they only have free play during certain times.

I wish Fiserv would stop putting Zelle transactions on Hold

We use Turnkey Service for Zelle through Fiserv. They are constantly putting transactions on hold and then we have to deal with members who don't verify their identities with the OTP and then call in bitching at us.

I say screw it. Let them find out the hard way when they send it to someone they never met who is selling a dog for $1500. Let them send that $3200 deposit for a house that is listed as for rent from some random ass foreign dude who just started posted on Facebook the day before.

Sauerkraut, onions, and mustard

I sautéed some onions and garlic, and then dump a good helping of sauerkraut in the pan. While browning the kraut, I seasoned it with pepper, and chipotle garlic powder. I let it cook some of the moisture out and get a good color and flavor on the kraut.

I didn’t realized I only had two buns left (and no sandwich bread), so I ate two hotdogs and I’ll be eating the rest of the beef franks mixed in with the rest of the kraut. Simple but so tasty.

Richard’s Hot Smoked Sausage

I made smoked sausage in a tomato gravy tonight using some sausage given to me from my brother. I don’t usually use Richard’s so I don’t know if my head is playing games or not, but each bite of sausage tasted sweet?

Am I imagining things? I don’t usually use Richard’s as I prefer Savoie’s.

Free Birthday Cheesesteak

When you live in south Louisiana, you get your cheesesteaks where you can. Jersey Mike’s gave me enough points for a free sandwich, so I got the chipotle cheesesteak.

I am not complaining about it being free, but it did seem smaller than last year. Private equity strikes again.

The scene where Ava breaks down when she can’t find her dad’s ashes hit so hard. The panic in her voice and the irrationally of hitchhiking back is so real.

Then the scene where she decides to spread his ashes multiple places.

Three eggs seasoned salt, pepper, garlic powder, onion powder, cumin, and chili powder. Jalapeño pepper (about to go bad) diced and then sautéed slightly before tossing my eggs into the pan. Added fiesta blend cheese at the end. I didn’t show it, but I had salsa Valentina to pour on each bite.

I didn’t have a lot of groceries in the fridge/pantry, but this would have been so much better with some meat, potatoes, or some salsa.
