Creamed Broccoli and Brie soup, topped with sautéed mushrooms and squid in ink. With a mound of crispy fried jalapeños

I made the broccoli and Brie soup by first steaming the broccoli for 20 minutes then blending it with a Brie, salt, a few glugs of vinegar and a few splashes of the steaming water to help in blend, and a few other seasoning, plus a bit of maple syrup. Next time I’ll trim the outer skin off the Brie for a milder flavor.

I know Goya has detractors here. But this squid is delicious!! I prefer it with a little bit of added salt. It comes in a rich, oil and ink sauce and is full of squid flavor. The squid is succulent and never mealy. Hits for me every time.
