1. Scooby’s alien heritage - Scooby-Doo: Mystery Incorporated

This modernized take on the series finally provides an explanation for why Scooby-Doo and certain other animals in the setting can talk, and boy is it a doozy:

There are ancient interdimensional beings called the “Anunnaki” that visit earth every few thousand years, but they must inhabit the bodies of animals to interact with humans. It’s revealed that some have animal descendants still living today, and those descendants inherited the ability to speak, including none other than Scoob himself.

Yes, you heard me right, Scooby-Doo is canonically part interdimensional god and that’s why he can talk.

2. Whatever the hell happened with the talking cat - Rick and Morty

This one’s more simple but still pretty crazy. The reason for the cat’s ability to talk isn’t actually revealed, but we know it was something absolutely horrific because just a mere glimpse of it was enough to thoroughly traumatize Rick and Jerry, to the point Rick memory-wiped Jerry for his own good. It’s similar to the “Noodle Incident” trope of letting the audience’s imagination try to fill in the blanks.
