Anyone ever deal with heat soak on their Carry Turbo. or other?

Mines a 99. Just bought here a few weeks ago. The issue is after shutting her off the antifreeze starts rapid bubbling in the overflow tank (only after shutting down, she runs fine). So far I've changed the thermostat (which was actually stuck open), Changed the radiator cap, did a compression test on the cylinders and a chemical block test (thankfully the head gasket is not bad), and lastly vacuumed the antifreeze. Still bubbles after a drive. Anyone else have any ideas. Also no leaking antifreeze that I can see.

So I'm building out my Kei truck into a coffee/Matcha truck. I have two designs. Obviously the one in photo 1 makes more sense with the hard container for safety, weather and a bunch of other reasons but am I the only one that thinks the tent looks so much better for farmers markets and events?

It will be in Florida so the cold isn't an issue. Would love your thoughts.
