Seedling come up with true leaves?

Growing some Mongolian Giants and this little dude came up with true leaves already. All of them just broke the top of the soil last night and you could see the other two don't have leaves yet. I have not seen this on sunflowers before, is this a sign it's going to be a real healthy big one?

I have a 6 ft tall American Giant hybrid and the past couple days the bud has not followed the Sun across the sky, does this mean it's getting ready to open? It's starting to look pretty juicy but isn't at that 10-in advertised bloom, if it is getting ready to open will it continue to get wider after Bloom?

If I were to set my dehydrator to the lowest setting (105F) would that make drying the seeds faster? I would like to save some for planting again but I'm concerned about mold if I accidentally store them too moist. This is my first time trying to harvest sunflower seeds and I'm seeing the bud start to form.

Both sprouted around the same time but one is much larger. Been watering them both with water from my turtle tank about once a week so they are getting plenty of nitrogen and phosphates. Any ideas?
