Pounding daiquiris type of night

Loving this Kuleana bottle, incredibly flavorful and bright. These go down way too fast.

Recipe:

2oz

Rum

1oz

Agave

Lime

Couple dashes of salt

Instructions:

Shake with pebble ice and a spent lime, then strain pour in a cold glass.

Late Night Idea, Pineapple Rye Smash

Bought some nice cut pineapple and thought it will go well in a Bourbon Smash. The JD Rye proof is 131.7, so I figured the bourbon would not be over powered. I added 1/4 oz of pineapple juice and Tepache, just to get some frothy foam. This was sweet, spicy and refreshing, wish I had more pineapple to make a second.

Recipe:

-about 4-5 cubes of pineapple

-six mint leaves

-1 oz of agave

-2 oz of rye

-1/4 oz pineapple juice

-1/4 oz Tepache

Instructions:

Mint first then pineapple chunks and muddle. Then dump all liquids and do a dry shake. After dry shake remove mint leaves (I don't like it when the ice pulvorizes the mint and releases bitter flavors) and shake with sphere ice. Finally strain in a glass with fresh sphere ice and garnish.

Garnish:

Press a pineapple edge in Tamarindo fruit seasoning and wedge it on the glass.

Good week

Chamucos Reposado is always a go to for me, but I finally got to try/buy Chamucos XA and it is amazing. I've only done a neck pour, but will revisit soon to pick out all the notes. Nose was pure butterscotch and pallete was mainly cafe de olla with no coffee tannins. There was more complexity, but I was enjoying it too much to properly analyze.

I haven't opened the Siempre yet, but I've had my eye on it for a while, hope it lives up to the hype.

Late Night Blackberry Bourbon Smash

Polished off a Sonic Coney Dog and remembered I had a handful of blackberries and mint sprigs almost past its prime in the fridge, so I decided to make a Bourbon Smash. I also had this Jim Beam Black 7 I bought last week and forgot about in a drawer. I love doing these, but straining the cocktail is a pain.

I'm not a fan of the traditional Daisy style Margarita, so I mainly make Margaritas with the Tommy's spec. But I found this Pineapple Citronge on sale and on its own I really enjoyed it. It is really sweet, but not chemically sweet and the Pineapple flavor also is quite natural. It also leans on the viscous side and it still tastes like a Tequila.

1st Test Recipe:

-2 oz Chamuco Reposado Tequila

-1/2 oz Agave

-1/2 oz Pineapple Citronge

-1 oz Limon

-Small Pinch of Salt

Instruction:

-Shake with pebble ice and spent half a spent limon, then dirty pour to a goblet

Results:

It tasted like a typical Tommy's Margarita. Absolutely no Pineapple flavor punched through and the Chamucos is dominant, but rounded/balanced. I was surprised I got no Pineapple. For my next test I will bump the Citronge to 1 oz, from 1/2 oz, and eliminate the 1/2 oz agave. I enjoy Pineapple flavors in my Margarita, I will often muddle two Pineapple pieces, but finding good Pineapple is not always an option all year, so I'm hoping this Citronge could be a good substitute.

Just completed my first year in my bourbon journey, figured I would do my first review of a new bottle I bought today.

Purchase: $75

Nose: Mainly powder sugar, light chalk/tums, and thin ethanol. I tried to pick out more, but I got nothing else.

Pallete: Light sweetness, old mint leaf, and heavy minerality

Finish: No burn, but slight bitterness, sour, and astringent

Summary: I'm not upset at the bottle, but I was expecting more. I get absolutely no Tequila/agave influence. It is a neck pour, so I plan to revist it and hope I get more complexity, but it is not very complex at all.

After a 12 hour shift I made my second favorite margarita. I call it La Bastarda bc its a sloppy riff of a combination of a Caipirinha and Margarita.

I wanted to finish my Chamucos, so I can open a new one, but it looks like I have 3.oz left.

Recipe:

4 oz Chamucos Reposado Tequila

2 oz Limon juice

2 oz agave

Couple Dashes of the finest HEB salt and Grapefruit Bitters

Couple of mint sprigs

Instructions:

-Shake all liquids and salt with pebble ice

-Dirty pour into drinking glass with about 8-10 smashed mint leaves

- Aggressively stirr the dirty pour with the mint leaves

-Top off glass with more ice and garnish with mint sprigs
