I haven't played the game in 3 years, I am returning and I'm trying to decide which class to give my Blackstars/Sovereign weapons, but I am worried I might regret later and want to switch mains

Curious to know what people think of these, for me this is one of the worst quest designs I've ever seen in my 30 years of gaming
While carrying someone, hold the lantern key and look to your horse, you will see a button to place the person on your horse
While on your horse, quickly press jump then dismount to jump off
Also on your horse press Force Palm to do a huge jump
There's some moves with your shield that are not on the skills list, like holding block and pressing heavy attack while near an enemy will flip them over, or holding block + heavy attack will do a bash and if you keep holding you will charge with your shield

I was exploring the northern part of Hernand and I found a big town with a castle, there's a bunch of vendors there but that's it, no quests, nothing happening, so I went to google to check if really there's nothing there, and I found out there's actually a bunch of quests there, but they're not immediately available. I have to progress main/side quests until something sends me to this town, which means I wasn't supposed to be out wandering, I'm supposed to be doing more quests. This is ironic since right at the beginning of the game the lady in white tells you "the world is yours to explore!". It's kinda bad advice.
So now that I understand how this game "works", I paradoxically hate it more and like it more. I like it more because now I know the "correct" way to play: I'm not supposed to explore everything right away, I should just follow quests more. But I also hate that the game locks away a huge number of side quests like that, essentially punishing early exploration and giving me the feeling that I'm walking around in a tech demo, where there's only houses and random NPCs but not an actual game.
If I keep the map unrevealed I can easily track which areas I have explored because of the fog of war, but if I reveal the map there's no way to tell which areas I've been to

Still doesn't beat a good rare with defenses, but getting a ton of rarity on this frees up the rarity pressure on the rest of your gear
