Recipe. Let me know if you make it

My grandma used to make a soup for the holidays. She’s long since past and my aunt started making it. Post-covid the family doesn’t meet as much anymore so I asked for the recipe. It’s been years and I finally started to make it my own (quite recently) by adding stew meat instead of meatballs. I’m going to slowly change things 1 by 1 until I can say my grandma would be proud of it.

Recipe is below:

Ingredients
⁃ 2 good sized carrots sliced in discs or quarters whatever you prefer
⁃ 3-4 stalks Celery, sliced
⁃ 3/4 white onion
⁃ The amount of Garlic your heart desires. Doesn’t matter how much
⁃ 1 small can Tomato paste
⁃ 2 cans diced tomatoes
⁃ Meatballs or 2 lbs ground beef (to make meatballs) or 2 lbs stew meat (trimming excess fat)
⁃ Beef bouillon cubes
⁃ Beef broth
⁃ Beef ramen noodles
⁃ 2 packs of Knorr vegetable dip/soup mix

Seasonings
⁃ Salt (I like kosher salt)
⁃ Garlic powder
⁃ Onion powder
⁃ Black pepper
⁃ For spice: some red pepper flakes and/or cayenne. No matter the choice give it some chili powder if you add either. It gives it a little smoky flavor and doesn’t leave it just feeling spicy. It adds some depth.
⁃ Smoked paprika

Instructions for frozen meatballs
⁃ cut up vegetables and put them in the pan reserving the garlic
⁃ Seasoning your vegetables to your liking
⁃ Start the pan on medium and put the lid on the pan to let the vegetables sweat. You can add liquid if using a non-stick pan, but I would not use oil because the end product will feel a little greasy. For a Dutch oven or stainless steel, I would recommend some oil or some sort of liquid. If you use liquid in either, use either water or beef broth.
⁃ Just before they’re done to your liking, add the chopped garlic.
⁃ Once you feel it’s done enough, add in the can of tomato paste and combine into vegetables.
⁃ Slowly add in your beef broth and incorporate it to the tomato paste. This will make the soup slighter thicker if you don’t add a ton of liquid. Depends on your liking though. Either way, add enough broth to be over your liking. That way it doesn’t come out super thick.
⁃ Once the broth level is where it should be in the pot, put the heat to medium high. Season your broth and add 3-5 bouillon cubes to your liking and the Knorr vegetable mixes
⁃ Let it reach a boil and then turn it down to simmer for 4-6 hours stirring occasionally. Half to 3/4 way through, add the tomatoes. Once you feel it has reached a point to your liking, add in the frozen meatballs and let those cook for an hour or 2. Check the meatballs. If need be. Cook longer.
⁃ During the time of the start and end of the meatballs, check your seasonings. If it’s too salty do less of the ramen seasoning on the next step.
⁃ Once meatballs are just about done, add 2-3 packs of ramen noodles with the noodles all crushed up into tiny pieces to make eating easier.
⁃ Add in the ramen seasoning packets.
⁃ Let simmer for about another 30min to an 1hr or until noodles are finished and seasonings are to your liking.
⁃ Let cool for just a bit before serving.

Instructions for fresh made meatballs:

Fresh Meatballs:

⁃	In a large mixing bowl, add 1-2 lbs ground beef (80/20 preferred)
⁃	For each lb add one egg (come to find out milk can also be a binder if there’s enough protein and fat)
⁃	A few dashes of Worcester sauce
⁃	Add Italian seasoned breadcrumbs until the desired firmness.
⁃	Form into the desired size ball shapes onto a flat microwavable (preferably ceramic) plate. You can also seat them prior to the microwave if you’d like. But that’s just more pans to wash.
⁃	Average raw size will microwave for approx 7-7:30 minutes.

- average seared meatballs will require less time. It depends on how you’d like them cooked.
⁃ Upon completion they will be transferred to a plate/bowl lined with extra absorbent paper towel.
⁃ Complete all batches
⁃ Let sit for 10 minutes
⁃ Add meatballs and existing liquid to soup
⁃ Let simmer for 1 hour or so

⁃	During the time of the start and end of the meatballs, check your seasonings. If it’s too salty do less of the ramen seasoning on the next step.
⁃	Once meatballs are just about done, add 2-3 packs of ramen noodles with the noodles all crushed up into tiny pieces to make eating easier.
⁃	Add in the ramen seasoning packets.
⁃	Let simmer for about another 30-45min to an 1hr or until noodles are finished and seasonings are to your liking
⁃	scrape off excess fat
⁃	Let cool for just a bit before serving.

For stew meat:
⁃ cut up vegetables and put them in the pan reserving the garlic
⁃ Seasoning your vegetables to your liking
⁃ Trim excess fat from stew meat and throw in pan with vegetables. Create a decent layer of meat
⁃ Mix veggies and meat up
⁃ Start the pan on medium and put the lid on the pan to let the vegetables and meat cook down.
⁃ You can add liquid if using a non-stick pan (in this instance, the veggies and meat will create a type of stock and won’t necessarily need excess liquid in a non-stick pan), but I would not use oil because the end product will feel a little greasy. For a Dutch oven or stainless steel, I would recommend some oil or some sort of liquid. If you use liquid in either, use either water or beef broth.
⁃ Just before the meat and veggies are done to your liking, add the chopped garlic.
⁃ Once you feel it’s done enough, add in the can of tomato paste and combine into vegetables and meat.
⁃ check your seasonings. If it’s too salty do less of the ramen seasoning on the next step.
- once everything is incorporated well and seasoning are correct, add 2-3 packs of ramen noodles with the noodles all crushed up into tiny pieces to make eating easier.
⁃ Add in the ramen seasoning packets for the number of packs of noodles
⁃ Let simmer for about another 30min to an 1hr or until noodles are finished and seasonings are to your liking.
⁃ Let cool for just a bit before serving.

Pickle suggestion?

Hi everyone!

As the name suggests, I am looking for pickle suggestions.

I’m looking for a dill pickle, but a little more garlic flavor and a little bit of sourness to it. I’m not sure if that exists, but was curious if there is.

I live near Harrison Packaging Co. in Michigan and I know they sometimes do an “open to the public” day but wasn’t sure if there was anything cheaper and with less (as I am one person 😅)

Thanks in advance!

I made a mistake when I left my old job, but luckily was able to get it back!

I worked in an office/laboratory job. Made over 28$/hr. I was an idiot and got over-emotional with my job and left on an impulse (internal transfer). I took a 5-ish$/hr. pay cut in the process. I learned some new skills. Learned some areas for improvement and areas of strength. I will be getting a base senior tech level employee + 2% increase (2.89$/hr.) raise upon moving back. It’s not what I was making the last time, but I’m glad I’m going back. I was a “stellar employee” (not my words) in that position and they are excited for me to be back. They told me they got as close to the last salary as possible, but couldn’t meet it fully due to HR, but hey. I’ll take it.

Now the issue is the HR software caused the hiring manager issues. So, they passed it on to their manager. The secondary manager tried, then they sent an email. Now HR and IT are involved and there is currently no timeline of when this will be fixed or when my transfer date will be.

Not looking for advice or anything. Just some good news with some not so great news.

I can’t afford the life I’ve been living.

I (29M) moved into an apartment 2 minutes from work in April for 1201USD/month. My car payment is 550/mo. My credit cards are about 350/mo. Internet 66/mo. Credit cards probably totaling 300/mo. Student loans 250/mo. Phone and car insurance 275/mo. Plus groceries and if I decide to eat out.

I feel so foolish for even trying to take this much on. I didn’t enjoy living with my mother, but at least she didn’t charge me rent. I just accepted a position for more money (2.89$/hr raise), but I just feel so stupid. I just wanted to be away from mom and and feel more independent. She doesn’t work anymore and I understand that she probably needed the help, but she just expected me to provide more and more and I just couldn’t take it anymore. So I had to sever what was there.

Has anyone been in a similar plight? What have you done to satiate the situation and all involved parties? I just feel like I’m at a loss right now. I can’t get out of my lease, but I’m trying to cut costs elsewhere, it’s just so difficult. I cannot even fathom why I tried to take this all on.

Meal: chicken fingers and crispy crowns with a sriracha + ranch sauce

Any thoughts?

Woke up this morning and it stung, but I think it got progressively worse throughout the day due to the high temp and humidity at my job. I was thinking spider. I have an ointment but it says not to put on open wounds and it currently has pus coming out.

I have an onsite clinic at work and planned on stopping in, but not sure what else I can do in the meantime time.

EDIT: Went to immediate care and they could not identify it was (bug bite, shingles, etc.). Will be contacting my PCP directly to assist with this as the doctor I saw at immediate care talked with me for less than 2 minutes.

Not sure how to feel

I met this guy. I feel like this guy actually likes me. We “met up” once, but that meet up was 7 hours long. I made dinner and we talked and ‘everything’. He’s sweet, but I don’t think he and I are compatible. I want to try, but I don’t want to force anything. Am
I just lonely?

First time alone. Want to spruce up the area

I (29M) am on my own for the first time ever (1BD/1BT). I’ve had roommates for years and lived with my mom for 3 years prior to this. I really want to make my living/dining area more welcoming. Does anyone have any suggestions on how to do that? I know it’s a shame that I can’t redo the walls, but working with millennial gray the best I can. The carpet has gold accents. I know I need to buy a proper coffee table too. But beyond that, any wall hanging recs?
Any help is appreciated.
