Spicy Salsa Recipe // My fridge pooped out, so here's a throwback Cooking w/ Oscar video *sorry for the quality* - new cooking vid coming next week!

For anyone who is wondering, I had a bit of a fridge issue. It stopped running! So, I had to buy a new fridge vatos... This caused a delay in the next video. Pero no te preocupes! It is on the guey.

I am happy to say the video was shot yesterday and should be released next week.

Enjoy this salsa video. It's my second ever cooking video shot on my crap phone. I hope you guys still enjoy it.

Ingredients:

Tomatoes

Onion

Jalapeños

Garlic

Cilantro

Chile de Arbol

Cumin

You want to get everything on a pan or comal, except for the cilantro, the chiles de arbol, and one clove of garlic (you can also opt to boil instead).

Get them as roasty toasty as you wanna! You mainly know they are done by the tomato skin breaking. The onion tends to take the longest.

Towards the end, when only the onion is left, put the chiles on the stove and get them a little roasty.

You can now blend all the ingredients but include our cilantro and a raw garlic clove. Also, add salt and some cumin, but not too much!

Boom!

4 INGREDIENT BABY PANCAKES (Sweet Potato & Banana Pancakes) // Cooking w/ Oscar

I make this for lil Oscarita all the time!

Ingredients:

🥔 1 sweet potato

🥚 2-4 eggs

🍌 1 whole banana

🧈 Butter or oil of choice

*You can peel the potatoes before boiling*

*OR NOT - once they are cooked, the skin comes off pretty easily*

The first thing you wanna do is boil that potato, but before we do that, you wanna chop it into smaller bits to speed the boiling process up.

Make sure you check on them to ensure they are soft and done before pulling them out.

Once they are out, put them in a bowl, and we can begin peeling them (you can wait for them to cool if you're patient(I'm not)).

Now mash these bad boys with your favorite masher (or fork/spoon). Throw in the banana and do the same.

Now we can throw in our eggs. To start, add 2 to the bowl and mix it up. You will more than likely have to 1 or 2 more eggs to get the consistency more running and less solid (the reason for this is because the eggs make it puff up and stay whole).

Now get your comal or pan nice and hot and add some butter or oil down.

Now we can start adding the mix, make them into nice circles, and wait for it to puff up. Flip and get it nice and golden brown.

Enjoy with some all natural maple syrup or peanut butter.

Ground Beef & Vegetable Soup // Cooking w/ Oscar

It's my favorite soup of all time. I grew up with this soup. It brings me huge comfort.

I loved it so much that I asked my mom to make it for my birthday a few times. ❤️

Ingredients:

​

1-2 lb Ground beef

Garlic cloves

Bag of green beans

4-5 Potatoes

1/2 an onion (your choice)

2 tomatoes

Bag of mixed veggies

Can of corn

Sazon Seasoning

Chicken Seasoning

Onion powder

Garlic powder

Pepper

Paprika

Chili powder

1st Chop up your veggies!

Then, get your pan and drop some oil and the chopped garlic. Once that's a little toasty, add your meat and get it toasted, too. Add some seasonings like the paprika, chicken seasoning, chili, onion, and garlic to the cooked meat.

Make sure you taste before calling it good!

Now, turn off the burner and set aside.

​

Now, get a pot set on a burner and fill it up with our non frozen veggies and water. Once that's hot, get the frozen veggies in there with the corn (if you haven't already). Cover and wait for it to warm all up and get soft(especially the green beans). Add the meat and mix it all up. Let it sit for a couple of minutes before tasting again.

Add more seasonings, mix, and taste.

I personally will add more chicken seasoning if it's lacking salt. Of course, always add more onion powder, garlic powder, and paprika.

Make sure it is to your liking and enjoy with some lime and cayenne!

You guys are the reason I am posting this new drop. I hope you enjoy it!

Limon Chicken // Lemon Chicken

Ingredients:

2 Chicken Breasts

Limes (5-7)

Sazon Seasoning

Chicken Seasoning

Onion Powder

Garlic Powder

First, we make our marinade. This is what we will let the chicken soak in for the next 2-6 hours in the fridge.

We chop our limes and ensure we have a good amount of juice, we then carefully add some 1 packet of Sazon, some onion powder, some garlic powder and a bit of chicken seasoning (be careful not to add too much). Taste it. If it needs more salt, add a bit more chicken seasoning and/or Sazon. MAKE SURE YOU DON’T OVERSALT // ALWAYS TASTE BEFORE PUTTING THE CHICKEN IN!

Now get your two chicken breasts and a fork and set them on a cutting board. We want to poke holes all throughout to ensure the flavor locks in while it sits in the fridge.

Once you feel you have adequately poked your chicken, cut it in half down the middle so it’s not so thick. Otherwise, we may have a hard time cooking it all the way through.

Now, set the 4 poked and cut chicken breasts in your marinade mix and leave in the fridge for 2-6 hours.

2-6 hours later…

Take it out and put it in a pan or comal! Cook thoroughly and ALWAYS make sure your chicken is cooked fully.

Someone asked for the Guisado rojo video (this was my first EVER cooking video) pls enjoy 😉

I want to start by saying this was shot on my really crappy phone. Also, I no longer use Teflon or most of those utensils, so dont come after me.

Ingredients:

Guajillo chiles

Chile de Arbol

Tomatoes

Onions

Garlic

Get these in boiling water and stat removing the smallest ingredients to largest by how they look and feel(with tongs). As long as they're soft, they should be good.

Tomatoes will literally crack in their skin. With the onion, it will be visibly softer.

Get these in a blender and add these seasonings:

Caldo de Pollo (Knorr)

Onion powder

Garlic Powder

Cumin (only add a dash)

Bay leaf or 2

Blend - this will be our Guisado or sauce.

Next, get the potatoes and cut them however you want (note: the bigger they are, the longer it'll take to cook through).

Set aside

Have some slivers of garlic cut up and add them to your pan along with some oil. Then add your ground beef and mash it up.

Once it's cooked up, you can add the same seasonings to the meat so it holds a little flavor. Dont go too overboard because the sauce will hold most of the flavor.

Now we add the potatoes and sauce on low heat and cover.

Make sure you check on it and mix around so you ensure no sticking and potatoes dont overcook themselves.

Serve in a quesadilla, on a tostada, or make into a taco!

Home-made MEXICAN beans?! WATCH AND SAVE THIS VIDEO

If you're tired of canned beans, then this is for you!

All you need is

a bag of dry beans (black)

Garlic Cloves

Guajillo Chile

Chile de Arbol

Clean the beans first and foremost

Rinse the beans

Get a crock pot and fill it with beans, water, garlic, and the Chiles (follow the ratio in the vid)

Set it for 6 hours

Cut up onions, get some cayenne, and serve it up, foo

You can also make these on the stove with a pressure cooker or an electric one.

REFRIED BEANS

get those beans in a pot and mash them up

Get some cheese and mix it in

3 INGREDIENT BABY PANCAKES 🥞

3 Ingredients Baby/Toddler Pancakes

We're back with another episode of Cooking w/ Oscar

This recipe is healthy and doesn't necessarily have to be for just kids, adults can enjoy them too! Personally, they're perfect for on the go if you're in a rush to go somewhere and need to feed the kiddos before or on the way, even.

If you use the ingredients as I did, you too will get roughly 4 medium-sized pancakes, but if you use a full banana and avocado, use at least 4 eggs. The reason is because the egg is what makes this combo able to puff and mimic a pancake without the flour. The trick is for it to be more liquid and not too thick, or else it won't puff, and it will burn easier.

If you dont like the consistency of my batter, you can and should use a food processor or blender to get it smooth and not clumpy. My child and I do not mind the nuggets of avo. Plus, it adds to the look, as well!

Step 1: mash up Avo and banana then mix in 2 eggs. (You want to make sure the consistency is running and not thick, otherwise add an extra egg).

Step 2: put some oil on your comal

Step 3: drop some down on the comal

Step 4: wait for it to puff up and then flip

Step 5: flip again after like 2 minutes.

Step 6: ensure it is cooked all the way

In this special episode of Cooking with Oscar, we take a stroll down memory lane with a staple in Oscar's childhood. This is something Oscar's mother taught him and is now being passed down to you all in this video. As you can clearly see, garlic will be in excess! Don't worry. You can remove garlic as you see fit.

Now you don't have to roast the veggies. Boiling is an option as well. What you need to know when boiling is to ensure the tomatoes skin cracks and the onion gets soft. Obviously, you want to take the garlic out first (since they're the smallest and therefore cook the quickest).

This recipe is enough for 3-4 people

The sauce:

3 Tomatoes

1/2 Onion

3-5 Garlic Cloves

We want to roast our veggies until they get roasted. We remove garlic, tomatoes, and lastly, the onion and place in a blender with 1/4 cup of water. Add your Italian seasoning, onion powder, garlic powder, and Knorr chicken seasoning.

The Spaghetti:

1lb of ground beef

Spaghetti Noodles

3-5 Garlic Cloves

Water

(Seasonings)

Get olive oil on a pan and drop your chopped garlics. Get them a lil toasted before dropping your meat. Break it up. Mix in some Italian, onion, garlic, and tiny bit of Knorr. Taste. Add sauce.

Make Noodles

Mix together

Boom
