How did neocaridina keeping start?

My assumption is that the shrimp were kept as food for other livestock, then colors were (likely accidentally) bred into them. But I can't find ANYTHING on Google about this

At first I thought one of these was a baby striped kuhli and the other two were dwarf kuhlis but now I'm not so sure, any ideas? The store I got them from just had them labelled as kuhlis

Never seen this kind of flapping behavior from these guys before, I've had them for roughly two weeks now. Could it be a mating thing? Or is he just flexing? Either way, super cool!

To clarify, I mean what the one in this video is doing, rapidly flaring his fins up and down. I'm aware they will otherwise flare out their fins for many reasons. Sorry for shoddy quality, these guys are impossible to get in focus

Set up this terrarium for my dad on Father's Day, he was wondering if there were any creatures he could keep in it?

It's about 3/4 of a gallon I'd say? I know isopods wouldn't work cuz there's no space for a humidity gradient, and it opens from the top so a jumping spider wouldn't work either. So far it's just springtails in there.
