Made some protein banana bread yesterday. Based on the protein deficient vegans recipe, but I made a few changes. Reduced the vital wheat gluten and added some oats and plain flour too. Reduced the sugar as well to just under half. The texture is something to get used to but it's quite nice! Still soft and spongy but just a bit chewier than normal banana bread. Tastes really good especially with some peanut butter
Tried golden kiwi on my yoghurt bowl for the first time today, it's super nice! Especially paired with the strawberries and cocoa yoghurt
The base is soy yoghurt, unflavoured pea protein, cocoa powder, pb powder, pinch of salt and two crushed up plain rice cakes

Base was Lidl's tomato and basil tortellini. Then I made a blended green sauce with kale, courgette, fresh basil, brown onion, garlic, white miso, lemon juice, nooch and black pepper. Mixed some mushrooms and broccoli into the sauce and topped with chilli flakes

Not certain about the texture of the rice cakes but it wasn't bad and it tasted quite good overall. Would maybe add less yoghurt next time so it's a thicker consistency
Rice with stir fried smoked tofu, carrot, snap peas and mushrooms. Plus some kimchi

Simple lemon cupcakes with a lemon icing
I used the rainbow nourishments recipe, though I only added 230g sugar. I feel like this is just enough with the icing but without I would add a bit more
Definitely going to experiment with adding other flavours, perhaps blueberries too
Quite simple and didn't take long to bake
Makes 18-21
Dry:
375g plain flour
230g granulated white sugar
Zest of one medium-large lemon
2 tsp baking powder
1 tsp bicarbonate of soda
Pinch of salt
Wet:
300ml dairy-free milk
150ml neutral flavoured oil
3 tbsp lemon juice
2 tsp vanilla extract
Icing:
150g icing sugar / granulated blended into icing sugar
2-3 tbsp lemon juice
Method:
Mix dry ingredients in a bowl
Mix wet ingredients separately in another bowl
Add wet to dry and whisk until just combined and smooth
Fill cupcake cases to 2/3 full
Bake at 170 degrees Celsius for 18-20 mins
Homemade seitan, steamed new potatoes broccoli and carrots, with a dash of gravy
Serves 2
160g broad beans podded (not double podded) and boiled for 4 mins
1/2 a medium brown onion and few cloves of garlic roasted in the air fryer or boiled with the beans until tender
1 tsp miso
Few sprigs fresh basil
1/4 tsp black pepper
1 tsp lemon juice
2 tbsp nutritional yeast
2 tbsp soy milk
Blend all ingredients to make the sauce
I served on top of penne pasta, with some cooked broccoli and mushrooms mixed into the sauce, and a Linda McCartney sausage and chilli flakes

35g oats, 5g unflavoured pea protein, 5g cocoa powder, 80g soy yoghurt, 1 tsp water, and a pinch of salt. I try to keep it quite thick
80g frozen strawberries defrosted overnight in the same tin and a spoonful of smooth pb

Topped with frozen blueberries, frozen mixed fruit from Aldi, and smooth pb

Made some carrot cake yesterday and it's definitely the best I've made so far in terms of texture, though needed a bit more sugar
Super yummy salad

Smoked tofu, edamame, cucumber and baby tomatoes. With salt, pepper, mixed dried herbs, nooch and sriracha

Also had two sesame crackers on the side
Moved into a new flat and now realise how much difference a newer and better oven can make! Same recipe as I always use but has more of a crust and remains softer inside

150g wholemeal bread flour
300g plain flour
2 tsp yeast
1 tsp salt
400ml warm water

Mix all ingredients together and leave to rise in a warm place for an hour

Tip into a loaf tin lined with baking paper and preheat the oven to 220 degrees Celsius

Quickly place the tin in the oven once preheated along with water in a tray underneath
​
Cook for 35-40 minutes
New potatoes, tofu, broccoli, carrot, mushrooms, salt, curry powder, cumin seeds, and amchoor powder. Topped with sriracha
