Tonight's dinner: Creamy Egg Pasta

Hey guys! I’ve been experimenting with combining two of my absolute favorite comfort foods classic white sauce pasta and a fluffy perfectly seasoned omelette. After tweaking the ratios I finally nailed the perfect texture where the sauce binds the pasta and julienned egg strips together before getting baked to bubbly cheesy perfection

Ingredients

  • Omelette: 2 large eggs, 1/2 tsp black pepper powder, 1/4 tsp salt.
  • Pasta: 7.1 oz pasta (short shape).
  • Sauce Base: 1 finely chopped onion, 1 tbsp butter, 1 tbsp flour
  • 1/2 cups milk.
  • Seasoning & Topping: 1/2 tsp black pepper powder, 1/2 tsp sugar, 1/4 tsp salt (adjust to taste), 1/2 cup grated cheese.

How To Do It

  1. The Egg Strips: Whisk the eggs with pepper and salt. Cook it like a thin omelette in a lightly greased pan, let it cool slightly, then slice into thin julienne strips.
  2. Boil Pasta: Cook your short shaped pasta in salted water until al dente, then drain and set aside.
  3. The White Sauce: Melt butter, sauté onions until golden, then add flour and cook for 1.5 minutes to remove the raw smell. Gradually pour in milk while whisking continuously until smooth and thick.
  4. Season & Combine: Stir in the pepper, sugar, and salt into the sauce. Toss in the boiled pasta and the julienned egg strips gently to coat evenly.
  5. Bake: Transfer to an oven safe dish, cover generously with grated cheese, and bake at 180°C until the cheese melts and turns a bubbly, golden brown.

How to Make the Perfect Creamy Beef Pasta

I made a super creamy white sauce pasta today but gave the meat a serious upgrade by frying it until it was perfectly crispy and deeply browned before mixing it all together.

  • 1 cup Meat (chicken or beef, thinly sliced)
  • 2 tbsp Butter
  • 2 tbsp Flour (maida)

  • 1 packet Pasta Spice mix
  • 1/2 tsp Black pepper (freshly cracked)
  • 1/4 cup Cheese (grated, for garnish)
  • 1 Fresh chili (sliced, for decoration)

Step-by-Step Instructions

  1. Boil the Pasta: Cook your 2 cups of pasta in salted boiling water until al dente, drain, and set aside.
  2. Meat Fry: In a pan, fry your 1 cup of meat on medium-high heat until the moisture completely dries out and it gets a beautiful, deep golden-brown, crispy texture. Remove from the pan and set aside.
  3. Make the White Sauce: In the same pan, melt 2 tbsp of butter and whisk in 2 tbsp of flour. Cook on low heat for 1–2 minutes to remove the raw flour taste. Are cocoa powder and Chocolate Powder completely different things?

I was baking the other day and ran into a massive realization that completely broke my brain. I always thought Cocoa Powder and Chocolate Powder were just two different names for the exact same thing

I’m curious where everyone else stands on this. Have you ever accidentally ruined a dessert by grabbing the wrong container? And when it comes to making a winter mug of hot chocolate, are you team "instant chocolate powder convenience," or do you actually take the time to build it from scratch using real cocoa powder and sugar?

Spicy Garlic Chili Beef

I’m sharing an incredible combination that brings together the fiery, savory heat of restaurant-style garlic chili beef with the rich comfort of smooth, creamy mashed potatoes. The way the glossy beef sauce mixes into the mash is out of this world

For the Garlic Chili Beef:

  • Beef (Thinly sliced / Julienned beef)
  • Corn flour & Baking powder (For the marinade)
  • 1 tbsp Cooking oil
  • 4 cloves Garlic (Crushed)
  • 1 large Onion (Sliced)
  • 1 Capsicum (Sliced)
  • Fresh Red Chilies (Sliced)
  • Tomato sauce
  • 1 tsp Lemon Zest
  • 1/2 cup Water

For the Creamy Mashed Potatoes:

  • 2 large Potatoes (Boiled & peeled)
  • 1/2 cup Milk (Warm whole milk)
  • 1 tsp Black Pepper
  • 1 tbsp Butter
  • Salt to taste

Cooking Process:

Step 1:

  • Mix your thinly sliced beef with corn flour, baking powder, and a splash of oil.
  • Why? This is a restaurant technique called "velveting."

Step 2:

  • Mash your hot boiled potatoes thoroughly. Stir in your black pepper, butter, and ½ cup of milk.
  • Never use cold milk, or your potatoes will become gummy.

Step 3:

  • Get your pan smoking hot with some oil. Spread the beef flat.
  • Leave it completely alone for about a minute to build a dark flavor crust, then toss quickly and pull it out of the pan.

Step 4:

  • In the same pan, drop in your crushed garlic. You only want to fry this for about 30 seconds until fragrant. If it goes a second too long, it turns bitter and ruins the dish.
  • Immediately throw in your sliced onions, fresh capsicum, and red chilies.

Step 5:

  • Pour in your ½ cup of water and bring it to a boil. Return the beef and your tomato sauce to the pan.
  • Here is where the magic happens: Because of how we marinated the beef in Step 1, that thin water instantly transforms into a rich, thick, glossy restaurant gravy as it simmers.
  • Right before turning off the heat, grate a tiny bit of fresh lemon zest over the top.

Step 6:

  • Scoop a massive bed of the fluffy black pepper mash onto a plate, make a well in the center, and pour the piping hot, glossy Garlic Chili Beef right over it.

Creamy Mango crepe

I tried making tri-color mango crepes and the final fold at the end is so satisfying to watch

I wanted to try something a bit more colorful than standard crepes, so I split the batter into green, red, and yellow portions. The contrast between the bright crepes, the whipped cream, and the fresh mango slices when you slice or fold it open looks incredible

For anyone wanting the basic measurements I used:

  • 2 tbsp oil

Quick Summary of the Process:

  1. Whisk the base batter until completely smooth
  2. Separate into three bowls for the food coloring.
  3. Fry them thin
  4. Whip the cream, layer the mangoes, and fold it up tight assembly method and enjoy

Caramel Pudding

I just made this batch of caramelized bread pudding, and I had to share. If you've never had this style of pudding before. it’s dense, velvety, and has a deep caramel topping that sinks into every single bite

🛒 Ingredients

  • 4 Large eggs
  • 2 cups Liquid milk
  • 1 cup Sugar (for the pudding mixture)
  • 3 tbsp Sugar (for the caramel)

How to Make It

Step 1: Prepare the Pudding Mixture

  1. Crack 4 eggs into a mixing bowl.
  2. Add 1 cup of sugar and 2 cups of liquid milk.
  3. Beat everything together thoroughly until the sugar is completely dissolved and the mixture is perfectly smooth
  4. Place a pan over medium heat and add the 3 tbsp of sugar.
  5. Let it melt completely without stirring until it transforms into a deep golden caramel
  6. Immediately pour the hot caramel into your pudding bowl or mold, quickly swirling it to coat the bottom evenly. Let it sit for a few minutes to cool and harden completely

Step 3: Steam the Pudding

  1. Once the caramel layer has set solid, gently pour your prepared egg and milk mixture right on top of it
  2. Place the bowl into a steamer, cover it, and steam on low-medium heat for 30 minutes

Step 4: Test, Cool, and Serve

  1. After 30 minutes, insert a toothpick or skewer into the center of the pudding. If it comes out clean, your pudding is done! If it's still a bit wet, steam it for a few more minutes
  2. Remove the mold from the steamer and let it cool down to room temperature, then chill it in the fridge so it fully sets.
  3. To unmold, gently run a knife around the inside edges of the bowl. Place a serving plate upside down over the top of the bowl, and carefully flip it over

Creamy Coconut Drink

Hey everyone! Just wanted to share this incredibly creamy drink I've been making. It uses both the coconut water and the soft coconut flesh, giving it a texture that’s way better than standard coconut water

The Ingredients

  • 1 Tender Coconut (Keep the water and scoop out the soft flesh)
  • Powdered milk & Sugar (to taste)
  • Whipping cream (Just 2 tbsp)
  • Sliced almonds & pistachios for that perfect crunch on top

Quick Steps

  1. Blend the coconut flesh, powdered milk, sugar, and a splash of the coconut water until it's completely smooth.
  2. Lightly whip 2 tablespoons of cream just enough to loosen it up, don't let it form peaks!
  3. Mix the smooth blend, the loosened cream, and the rest of your coconut water together in a glass. Garnish with the nuts.

The trick to this drink is getting the cream texture exactly right so it integrates perfectly without separating. If you want to see the step-by-step visual process, texture checks, and exact ratios

crispy potato nests

I made these crispy potato nests filled with spicy fried chicken and a fresh, zesty salad, and honestly, they turned out so much better than I expected. If you want a fun cooking project that looks like it came from a restaurant but is actually super doable at home, you have to try this

Here is exactly how to make them:

Ingredients

For the Potato Nests:

  • 5 medium potatoes, peeled
  • 4 tbsp cornflour
  • 1 tsp salt

For the Chicken Marinade:

  • 10 5/8 oz boneless chicken breast, cut into cubes
  • 2 tbsp cornflour
  • 1 tbsp soy sauce
  • 1 tsp crushed dried red chilli
  • 1/2 tsp black pepper powder
  • 1/2 tsp salt

The Salad & Toppings:

  • 1 cucumber, finely sliced
  • 2 green chillies, finely sliced
  • 1 medium onion, thinly sliced
  • 3 tbsp fresh coriander (dhonepata), chopped
  • 1 lemon, juiced
  • 2 tbsp of whatever sauce you like (mayo, chilli sauce, or ketchup)

For Frying:

  • 2 1/8 cups oil

The Instructions

  1. Prep the spuds: Grate your peeled potatoes into thin shreds using a box grater. Wash them really well under cold water to get rid of the extra starch, then drain them and pat them completely dry with a clean kitchen towel.
  2. Marinate the chicken: Toss your chicken cubes into a bowl with 2 tbsp cornflour, 1 tbsp soy sauce, 1 tsp crushed red chilli, 1/2 tsp black pepper, and 1/2 tsp salt. Mix it up well and let it sit for about 10 minutes.
  3. Chop the greens: While the chicken is hanging out, prep your salad veggies slice up the cucumber, green chilies, and onion and chop up the coriander. Throw them together in a bowl and set aside.
  4. Par-cook the potato shreds: Take your dried potato shreds and toss them with 4 tbsp cornflour and 1 tsp salt. Give them a quick stir-fry in a pan with just a tiny bit of oil for a few minutes until they start to firm up, then let them cool.
  5. Shape the baskets: Grab some small steel bowls and line the insides with an even layer of the par cooked potato shreds. Press them gently into the sides and bottom to build your nest shape.
  6. Fry the nests: Heat up your frying oil in a deep pot or wok. Carefully lower the potato-lined steel bowls straight into the hot oil. Fry until they are golden and crispy, then use a spatula to gently pop the nest out of the bowl. Drain them on paper towels.
  7. Fry the chicken: Toss your marinated chicken cubes into that same hot oil and deep-fry for about 5 minutes until golden and cooked through, then drain.
  8. Assemble: Toss your fresh salad veggies and hot fried chicken together, squeeze the lemon juice over it, and mix well. Stuff the mixture generously into your crispy potato nests, drizzle your favorite sauce on top, and eat them immediately while they're fresh and crunchy!

Bao Buns with a Spicy Mayo

First time making bao buns completely from scratch, and honestly, I can't believe how fluffy they turned out! I was a little intimidated by the dough, but the process was surprisingly straightforward.

I stuffed these with crispy fried chicken pieces, sliced cucumbers, thinly sliced onions, and fresh green chilies for a solid kick. Finished it off with a generous drizzle of spicy mayonnaise sauce. The contrast between the pillowy soft bun and the crunch of the chicken is absolutely elite

🛒 Ingredients

For the Bao Dough:

  • 1 cup all-purpose flour (maida)
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp oil
  • 1 cup milk (Tip: Warm it slightly before adding the yeast to help it activate faster!)

For the Filling & Topping:

  • 4 fried chicken pieces
  • 2 tbsp mayonnaise
  • 1/2 cucumber, sliced
  • 1/2 onion, thinly sliced
  • 2 green chilies, sliced

Instructions

  1. Make the Dough: In a bowl, combine the all-purpose flour, instant yeast, sugar, salt, oil, and milk. Mix well and knead until it forms a smooth, soft dough.
  2. First Proof: Cover the dough and let it rest for 30 minutes until it is slightly risen and soft.
  3. Shape: After resting, roll the dough out into a slightly thick sheet. Cut into round shapes using a round cutter or the rim of a glass.
    • Note: You can fold the rounds in half before steaming to get that classic split open, sandwich-style bao shape!
  4. Steam: Place the dough shapes into a steamer and steam for 2–3 minutes.
  5. Assemble: Remove the fluffy buns from the steamer. Fill or top each bun with your fried chicken pieces, a drizzle of mayonnaise, cucumber slices, a little bit of the sliced onions, and the green chilies.

Serve immediately while they're warm and pillow-soft

Creamy Mango Yogurt

This mango yogurt dessert is the ultimate refreshing summer treat. By straining plain yogurt until it's incredibly thick and creamy, then whisking it with luscious mango purée, you get a velvety, melt-in-your-mouth texture that balances tangy and sweet flavors perfectly. Garnish with fresh, vibrant mango cubes for an elegant finish that looks as good as it tastes!

RECIPE

Ingredients

  • 1 liter plain yogurt (strained)
  • 1 cup mango purée
  • 1/2 cup sugar
  • 2 tablespoons milk powder
  • 1/2 cup fresh mango pieces (for serving/garnish)

Instructions

  1. Strain the Yogurt: Place 1 liter of plain yogurt into a muslin cloth or a fine-mesh strainer. Place it over a bowl and refrigerate for 2 to 3 hours, allowing all the excess water (whey) to drain out entirely. Once the yogurt is drastically thickened and creamy, transfer it to a clean mixing bowl.
  2. Blend the Base: Add the 1 cup of sweet mango purée, 1/2 cup of sugar, and 2 tablespoons of milk powder to the strained yogurt.
  3. Whisk Until Smooth: Whisk everything together vigorously until the sugar completely dissolves and the mixture is entirely smooth, glossy, and lump-free.
  4. Chill and Set: Pour the smooth mango-yogurt mixture into your serving dish or a baking mold. Smooth out the top with a spatula and place it in the refrigerator to chill and firm up completely. (Note: If making a classic Bhapa Doi variant, this can also be lightly steamed before chilling to get that beautifully set cake-like slice).
  5. Garnish and Serve: Just before serving, slice into beautiful portions and arrange the 1/2 cup of fresh mango pieces beautifully around the edges. Serve ice-cold!
