Nitric oxide salad

A few people asked me about the salad I made in my last post here so I’m sharing what I put in my salad mix for the week. My dear friend Suzanne shared this recipe with me from the Monkey and Me kitchen adventures website.

Why nitric oxide? Nitric oxide plays a pivotal role in enhancing athletic performance and supporting cardiovascular health, making this salad a game-changer for anyone:

I used a bundle of chopped red Swiss chard
One bundle of chopped kale, stems removed
One package of arugula
Two large carrots shredded
One bundle of parsley chopped
One handful of dill chopped
Five ribs of celery cut into thin strips and chopped
Five or six scallions chopped

I make enough salad mix to graze on once daily for a week, and I switch up the dressing and toppings, to keep my pallet interested. You can add pumpkin seeds, hemp hearts, walnuts, pecans or whatever you like!

One day I made a berry salad with fresh raspberry, blueberry, apple, and a raspberry pomegranate dressing…

Today I made a watermelon salad with avocado, pumpkin seeds and an apple cider vinaigrette!

Dr. Greger How Not To Age

I recently discovered Dr. Greger’s books and they have really inspired me on my plant based journey to focus more on WHOLE FOODS, and I’ve also eliminated almost all salt and oil. NO OIL? NO SALT? I thought it would be very difficult but so far so good…and since last week I’ve been feeling amazing! I use his cookbook as a guide but usually end up cooking from the heart, which is my way. Here’s a few images of things I’ve made in the last week or so!

1.) Rolled Oats with chia, flax, hemp, blueberries, pomegranate arils, and banana with cinnamon and maple syrup.

2.) Quinoa black bean salad, with a nitric oxide salad, avocado, sweet potato and pepitas.

3.) Vegetable stirfry with miso tofu and sesame seeds.

4.) leftovers from slide 2!

5.) I made this soup from scratch with vegetable broth, onion, garlic, pinto and garbanzo beans, mushrooms, kale, and toasted kasha!!

Quick and Easy Stirfry

Had some leftover rice and a zucchini on its last leg so I diced it all up and threw it in a pan. I did a quick sriracha and ponzu marinade on some tofu while I chopped everything. Dinner was done in twenty minutes!

Excellent dish to increase your daily fiber intake!! Black beans, garbanzos, edamame, sweet peppers, green onions, and roasted corn. Made a dressing with tajín, fresh lime juice, and chili crisp. Finished with some cotija cheese. Delicioso!!

Quinoa Kale Salad (macronutrient dense!)

This salad took time but it’s well worth the effort!!
Steamed kale
Quinoa cooked with dukkah
Cannellini beans
Tri color peppers
Celery
Green onions
Roasted walnuts (added as a finishing topping)
I added some shredded mozzarella my portion!
Homemade dressing with maple syrup, apple cider vinegar, celery seed, fresh parsley and green chilies.

Quick stir fry

Was craving Chinese but didn’t want to spend $30 on delivery so I made a quick stir fry with some crispy tofu and a ton a veggies. Hoisin chili crisp garlic sauce with some sesame seeds. Took less time to make than waiting for delivery!

Air France/Concorde menus

My friend’s father used to fly on the Concorde in the 1980’s for business, and he thought these menus would be of interest to her, as she was a dressmaker. My friend has these in sealed conservation plastic sleeves so I sadly was unable to photograph the interiors, but these are original costume sketches by fashion designer Marc Bohan for an Air France Concorde menu.

Marc Bohan served as the artistic director for Christian Dior, and these illustrations were created around the late 1980s.
Such sketches are rare collectibles often found on vintage flight menus or sold as individual artworks.

Whipped up dinner in fifteen minutes. Used a package of Tasty Bite madras lentils with sautéed zucchini and chickpeas. Added some crispy garlic, Greek yogurt, lemon, avocado, chili crisp and fresh cilantro. Toasted some sourdough bread and chowed down!
