Can you cook and eat fish straight out of the sea or should you freeze them first? Looking at sea bass primarily

These are my current specs. i know emulation is mostly CPU based and the FX8320 isn’t great for it. I want to change the Motherboard, RAM and CPU. Graphics card also but at a later date. Although I did find a GTX 980 4GB GDDR5 for £45 in my local CEX, I could get if that’s worth picking up but I don’t know how big a difference it would make.
I probably need a new PSU too with the age of it, but I haven’t had any issues with it so far. i have a PS5 so I don’t need something that can play modern games. It will just be for older games, emulating and some indie stuff on Steam, but those are usually quite low spec anyway. I’d want to keep the current case too.
It struggles with PS2 which is why I want to upgrade, but if it could do PS3 too that would be great. I’m not sure how powerful a PC you need for that though. It also upgraded to Windows 10 currently.
Also it will be at 1080p for now. I may get a 1440p monitor down the line.

Their homemade garlic sauce too
25 mins in air fryer on 190. Cooked them skin down for first 15 mins, then flipped. last 5 minutes on extra crisp setting. Sauce was melted unsalted butter and a mix of both sauces. Seasoning was salt, pepper, garlic powder, onion powder, paprika, cayenne pepper and chilli powder.
this one was actually quite big compared to most of them too
On my local pier last year I caught loads of smelt using a lrf rod and a mini sabiki rig. i was wondering if they would work well as live bait for trying to catch a bass? And if so what would be a good rig to use?
I have a 7-30g lure rod. I was thinking maybe a carolina rig would work? Or would it be better to just hook the smelt and toss it out with no weight?
I also have a pier rod that I normally use a 1 up 1 down flapper rig on, would that work/be better?
Has anyone had any success with Smelt as live bait? I usually just use ragworm. But if Smelt would work I could lrf then live bait and have a session with both
i’ve done it by eye but I’m guessing if they’re not mounted equally then the skates will act differently due to different mounting position?
