Memorial weekend hot chicken

Wet batter

1 part water, 1 part flour.

Shot of vodka

Tsp baking powder

Add whatever seasoning you like

Cayenne, garlic powder, onion powder, pepper are a must for me.

Flour

2 parts flour, 1 part corn starch

Baking powder 1.5 put per cup of flour mix

Same seasoning as batter in flour mix

Hot oil

Heat your go-to oil (i used pork lard) to 300degress and pour into a seasoning mix of cayenne, paprika, garlic powder, onion powder, dried thyme, pepper, sugar, salt, msg.

Dry seasoning

Same as hot oil.

Sauce

Use a blender to mix mayo with chipotle in adobo sauce, sugar, garlic and onion powder, salt, lemon juice.

Techniques

When dredging, take a minute per filet to properly dredge. Firm but not too firm presses.

Maintain a temp of 350 degrees ferenhiet.
