Yay!! My first sourdough after so many many failures

I divided into two dough right before shaping, why does only one look better than the other one…?

• 150 g starter
• 560 g water
• 720 g bread flour
• 80 g whole wheat flour
• 16 g salt

I used perplexity to get a timeline to bake cause I work in the evening!

  1. Add the water + starter to the bowl and stir until loose.
  2. Add all the flour and mix until no dry spots remain.
  3. Rest 20–30 minutes.
  4. Add salt if you did not mix it in already, then do your first fold at about 9:30–10:00 AM.
    • +30 min: first stretch and fold.
    • +30 min: second stretch and fold.
    • +30 min: third stretch and fold.
    • Then: let bulk continue until the dough looks puffy and has risen some, not fully doubled.
    • Then: divide into 2, pre-shape, final shape.
    • Then: cold proof overnight and bake tomorrow.

Preheat 500F for 20 mins
Open bake 475F for 15 mins with steams
Reduce to 420F for 15 mins without steams

Any recommendations on where to get sourdough starter?

Hello! I’m new to baking sourdough, and I started growing my own starter a week ago (still feeding daily).
I was just wondering if there is any recommended brands, websites or even local shops where I can buy their active sourdough..
Feel free to share your own experience in trying dry sourdough starter on amazon !
Thank you in advance!!
