I think I don't understand "research" and "technology" functions.

Forgive me if not allowed or over done. I cannot for the life of me figure out how to advance fast enough to have factories and trains for trade.

I set all the seemingly right studies and civics, but get lapped by neighbors and fall apart after the "exploration" age.

Youtube vids havent been very helpful, as I swear I'm following their instruction and still fail. WHAT AM I MISSIING!?

Novice observation that is confusing.

Apologies in advance for my ignorance, and google isnt doing it.

Context: I cook. Mostly at home these days, and professionally in the past. So I know how much of a pain in the ass cleaning flat tops are.

This summer I've seen people firing up and dirtying Blackstone flat tops, just for a few chicken breasts. And I can't figure out why go through all that to achieve the same results and control you could with a single pan.

Volume I'd understand. But is there something I am missing?
