Breyers non dairy for Ice Cream Cake
I'm thinking about making a test-ice cream cake for my birthday. Not with actual cake, but the style of Carvel and Dairy Queen cakes.
I'm trying to decide which ice cream brand to use. I am vegan, so l've been looking exclusively at non dairy options.
I'd really prefer to use Breyers non dairy because it's the cheapest and most available option. All the other dairy free ice creams are only 1 pint, and I need 3 quarts of ice cream (approximately 6 pints) for the entire cake. Pints vs quarts are expensive!
Also, Breyers non dairy is much fluffier, airier, and softer straight from the freezer than other (dairy and non dairy) ice creams. Do you think I could make Breyers non dairy work? Do you think it will loose structural integrity? Should I splurge on 6 pints of ice cream to assure it's closer to Carvel and Dairy Queen cakes?

Chocolate Silken Tofu
I am vegan and have definitely been failing to replicate all these fairlife/whey/1% milk recipes. I was inspired by a post in my fav subreddit Chocolate Tofu Ice Cream to try silkened tofu. This is the creamiest I’ve been able to get it without using some calorically dense vegan cream or oils. I am genuinely so excited because I’ve been in a slump of not making creamis due to a lack of satisfaction with my protein powder recipes. They would always have a lack of creaminess and a weird texture. This is high protein and creamy even without protein powder! It reminds me of Breyers non dairy chocolate ice cream. I know the photo does not look amazing, but I swear this is the best dairy free shit I’ve had. Look at the original post for a more picturesque example.
-200 grams silken tofu
-15 grams cocoa powder
-pinch of stabilizer (I did one pinch xantham and one of guar, you could probably omit idk)
-splash of vanilla extract
-25 grams erythritol
-25 grams allulose (or your preferred sweeteners)
-heavy pinch of salt
All mixed in a blender and then poured into a pint. It’s very thick and could definitely also work as a pudding. I recommend multiplying these numbers by 1.5 because the mixture didn’t make it completely to the max fill line. I froze the mixture for 24 hours, ran under hot water for 30 seconds, and spun on light ice cream, and respun it once. Let me know if you play around with silken tofu and successfully make improvements!
200 calories, 17 grams protein, 36 grams carbs, 7 grams fat
No sugar added cherry pie mix sorbet
I didn’t blend, just filled to the line with canned no added sugar cherry pie mix (almost, but not quite, the entire can) a bit of allulose and a monk fruit/erythritol blend, and a squeeze of lemon. Yummy and low sugar! About 200 cals per pint
coconut milk recommendations?
I’ve been vegan for about 3 years now, but I’ve always avoided using coconut milk in recipes.
The issue is I really don’t like coconut flavor or smell. It comes off as too tropical to me. I’m totally fine using refined coconut oil, and I love mass produced coconut-based ice creams that use highly processed coconut ingredients, but coconut milk/cream itself is where I struggle.
A lot of vegan recipes online (especially for creamy things) rely heavily on coconut milk, and it makes me feel like I’m missing something (maybe it doesn’t actually come through as much as I think it will?) Or maybe certain brands are more neutral?
I reallyyy want to make ice cream, and vodka sauce.
Both seem to rely heavily on coconut milk, and I’d love to get as close as possible to traditional versions without that coconut taste.
I know plant-based whipping creams exist, but they’re pretty expensive compared to canned coconut, so I’m hoping for more budget-friendly alternatives or specific brands.
And yes I know about cashew recipes. But they always require so many extra steps of soaking and blending and straining (plus are super expensive), and cashews don’t have as much saturated fat to achieve the same effect as coconut (except for so delicious cashew ice cream- but even that product has coconut oil in it!! And there are no recipes I could find using refined coconut oil in combination with cashews or another fatty plant based milk to achieve the same effect)
I would really appreciate any tips or brand recs. Particularly brand recommendations. Who’s got the least coconutty tasting canned coconut milk? Thanks

The cheese texture was off but otherwise the taste for a cheese as mild as mozzarella was delicious. The crust was okay, but pretty close to regular dough, especially considering the macros!
