After several months of cutting is it better to do 1-2 weeks of maintenance then lean bulk or go straight to lean bulk?

I’m a 22 year old bodybuilder who eats only clean whole foods such as beef, eggs, potatoes, and fruits. I live in a hot country and take my health and looks very seriously.

Do you guys eat all the fish guts and organs or do you remove them and just eat the skin and flesh?
I get fresh fish from the fish market and they typically remove the organs and just leave people with the flesh and skin.
But I’m thinking I should keep the organs because they are nutrient dense and very healthy.
It seems like a waste to get rid of them. What do you guys think?

I’m a very clean eater and I need to hit my protein while flying overseas but unfortunately every beef jerky I can find is full of sugars, artificial flavors, preservatives, additives, etc.
I’ve been doing some research and I found beef jerky sold in pet stores actually only contain one ingredient which is just beef esophagus. This is a very clean and lean cut of beef which is perfect for me and my travelling time.
It’s looks and smells the same as normal beef jerky. The only difference is the clean ingredients and that it’s sold at a pet store. I’m wondering if I can bring it as my protein source on my plane rides overseas?

Should I be getting raw goats cheese? I see it at every store but I’ve never tried it.
It’s hard to tell the quality of the milk but it’s probably mostly grain fed.
Pasteurized A1 dairy tends to cause me inflammation so I’ve been avoiding it and I feel much better.
I haven’t been consuming much dairy recently but this seems like a potentially good option I can begin including into my diet.
