I finally got around to making Miyoko’s new fresh mozzarella recipe that uses watermelon seeds! It wasn’t too difficult to make and it came out very good! Layered slices of it with some fresh basil, heirloom tomato with flaky sea salt & pepper, some balsamic glaze on toasted GF sourdough and it was perfection🤤

I’ve been eating different variations of the same meal for dinner pretty much every night for the past week or so. I’m exhausted and in pain and can’t do much better when it comes to “cooking” (Food Processor FTW!). I’ve even had it for brunch too. lol it just hits the spot every damn time 🙌🏻

Bowl 1 (my personal favorite)

sushi rice, watermelon poke, purple cabbage, shredded carrot, cucumbers, baked shredded tofu (with sesame oil & soy sauce), rainbow bell peppers, scallions, sesame seeds, & spicy mayo (Vegenaise + sweet chili sauce).

sushi rice, watermelon poke, avocado, shredded purple cabbage, shredded carrot, cucumbers, baked shredded tempeh (with soy sauce & agave), scallions, pickled ginger, horseradish wasabi, & spicy mayo (Vegenaise + sriracha).

This is the final chapter of my dessert designs! Thank you to all who sent awards, kind comments, & ideas! It was so fun to make all these and I’m so glad people enjoyed all my treehouse designs!

Just used up some leftover roasted veggies & herbs that were dying in the fridge!

GF Potato Gnocchi, Beyond Italian Sausage Links, Broccoli, Cauliflower, Zucchini, Constellation Tomatoes, all drizzled with EVOO, Italian herbs, garlic, onion, nooch, salt, & pepper.

The sauce was just silken tofu, sundried tomatoes, nooch, lemon juice, salt, pepper, garlic, & onion powder.
