I'm trying to play poker on my phone when there isn't wifi around. Are there any phone games that have interesting AI to play against, which don't lock up if I don't have any signal?

In general, I'm trying to collect resources on learning how to play better home games, but I'm not exactly sure of the terminology, so it's difficult. I can learn card counting and statistics all day, but a lot of that doesn't matter if I can't get a good read on how confident the other people at the table are.
