Sushi (Shrimp)

Prep & Boiling This is a crucial step to keep the shrimp perfectly straight and beautiful.

Skewering: Insert a bamboo skewer along the belly side of the shrimp to keep it straight so it won't curl up while boiling.

Boiling: Bring water to a boil, drop in the skewered shrimp, and cook for about 2 minutes.

Cooling: Once boiled, submerge them in cold water to cool completely.

Shelling & Butterfly Cut Once fully cooled, it's time to shape the shrimp.

Peel: Gently remove the skewers and peel off the shells.

Trim: For a neat presentation, trim a tiny bit off the tip of the tail and the head end.

Butterfly: Slice along the belly side to open (butterfly) the shrimp. Clean out any remaining vein.

Soaking in Vinegar Solution This is the key to elevating the flavor! Soaking in a seasoned vinegar bath tightens the texture and adds a rich flavor.

Vinegar Bath Ratio:
Water: 1000 ml
Vinegar: 300 ml
Sugar: 100 g
Salt: 15 g

Soaking Time: Soak the shrimp in the mixture for 20 to 30 minutes.

Stumbled upon this amazing cafe during a walk in Kiyosumi-Shirakawa. From the outside, it looks like a vintage industrial warehouse with rusted corrugated metal, but inside, it’s a calm, spacious sanctuary with comfortable leather armchairs and high wooden ceilings. Enjoyed a classic melon soda float while soaking in the atmosphere.
