Green Beans Siphoning

Was in a hurry this morning and pulled the weight as soon as my gauge dropped to 0. I guess it wasn't quite done yet because I immediately knew I had made a mistake . . .

Well anyways I have about 4 jars with water level at or below halfway, a few around 2/3. Thankfully the bottom layer of jars didn't siphon at all!

I have seen conflicting information on the longevity of siphoned pressure canned goods. I am under the belief that the ones that are at half or less need to be treated as not shelf stable and the ones that are over 50% will be fine. Is that correct? Thanks!

Canned Potatoes

Canned potatoes vary widely in consistency. Safe tested recipe followed precisely, used fresh water to pack, etc. Boiled ten minutes per directions and I think that rendered the chunks mushier than expected at the bottom of the pot? They were all chunks when I put them in the jars (I used a strainer) but some collapsed more than others.

This is still perfectly safe, right? I presume the recipe accounts for these deviations.

Eggplant Allergy???

I've eaten eggplant my whole life. It's one of my top favorite foods, and I grow buckets of it every year. Starting about a month ago, any time I eat eggplant I immediately get intense burning in my mouth, and it feels like I've got canker sores all over my tongue for several hours. No gastric distress.

My eggplants are starting to produce huge amounts of absolutely gorgeous fruit. Is it dangerous for me to push through and keep eating food with eggplant in it? Or might I develop an anaphylactic response? Foods still taste good in the moment - I'm just mildly uncomfortable after.

And is there any hope this might go away as suddenly as it popped up? It's not the most devastating allergy but it does have me feeling a little teary. These are my comfort foods.

Garbanzo Beans canning

Hey y'all. I do a lot of canning but I haven't yet canned any beans. But between my kids and myself we consume a tremendous amount of hummus these days, so I'm trying to price out the benefits of canning my own. Curious if anyone could help me with the math on this. I generally use 3 14.5 oz cans of organic garbanzos at $1.15 a can. I can obtain organic chickpeas at about $3.50 a pound. I'd probably can in quarts, so add another $0.25 for the lids to each quart (I can get them cheaper, but that's my current cost per lid right now).

The math I'm getting hung up on is converting pounds of dry beans to quarts of canned beans to 14.5 oz cans of beans (does that make sense), so that I can figure the price difference. I'm getting a ton of different answers.

It would need to be at least 50% cheaper to account for my time and energy, because I already can a lot.

Any thoughts? Is it worth it? Thank you!

Edit: well that was fast. Unless I find an absolute bargain on dry chickpeas, or Lidl raises their prices, I will cheerfully pay the $1.15 per can 🤣

Canine Eruption

Hey parents!

I have a 20 month old with all 8 incisors and his first year molars, but no sign of his canines. He hasn't gotten any new teeth in six months. What is your experience with how long it will be before they erupt? I am at sea here because my first born had all his teeth, including his second year molars, by 15 months!

Harvest!

We went on vacation Friday - Sunday. I stripped the garden Thursday night.

This is what we came home to this morning. Also, 20 eggs from our 6 chickens.

We have a 40x4 raised bed which is half tomatoes which haven't started yet. One 10 foot diameter circular bed. One 10x2 foot bed on the side of the house that is mostly herbs. All on a rented 1/3 acre suburban lot that is completely wooded in back.

You can do a lot with a small space!

Ammonia soaked clothes in washer?

Hey y'all. My helpful toddler upended a bottle of ammonia into a basket of clothes in the laundry room. They soaked up about a quart of cleaning ammonia.

Baby teeth eruption order

Hi! My second child is 20 months old. He has his upper and lower central and lateral incisors, and his one year molars. He has yet to show any signs of his canines. Is this typical?

I don't have much to go on in terms of normalcy because by 13 months, my oldest had his incisors, canines, and both his first and second molars, *except* he is missing both his lower central incisors.

My first born got his first tooth at 4 months and my second didn't have any until almost 8 months, so I presume that he is more delayed in this area, but I'm just curious.

Breast Exam Resources?

I've developed painful itching in my right breast that has lasted for a few weeks now. Not on the nipple, deep within the breast tissue. It started immediately after that same area threatened mastitis (which I was able to knock out) but I would like to get it checked just in case the mastitis symptoms might have been something else.

The problem is I don't currently have an OBGYN I'm working with. My PCP is also a women's health provider and does my routine care/paps/breast exams etc, but I feel like I want someone with more specialization for this. But I don't have insurance and don't want to pay through the nose to get established with an OBGYN.

What should I do to find a provider that is affordable?

Safe to Eat?

Followed Ball BBQ pork recipe precisely. Two jars didn't seal. Pulled from canner at 10 pm, just put them in the fridge now at 10 am because I just got around to checking them.

Totally safe to consume, yes?

Keeping Green Beans Green Hack

Is there any reason why using a bit of zinc gluconate to keep green beans green wouldn't be safe?

It's about 300 mg powder which is maybe at best a half teaspoon? I think probably a lot less. No other added ingredients.

I can't see why this wouldn't be safe as the zinc gluconate is in and of itself completely shelf stable and the amount added would not affect the density of the solution.

Poop Regression?

I have a 3.5 year old who has been fully potty trained (night and day) for over a year. Zero problems, he was very easy to potty train, got poop and pee down in 12 hours and I didn't even have to night train him at all. As of the last few weeks he has started consistently pooping in his underwear, sometimes feet from the bathroom, without attempting to even get to the bathroom.

Help, please! I don't understand what is happening and it needs to get fixed.

Help!

My canner lost pressure with ten minutes left on the clock. I have to figure out what is wrong with it, but for now, I just pulled these from the canner (took off the heat at 7 pm). They are still hot and bubbling.

Can I safely leave them on the counter overnight? They all appear to have sealed.

They are hot enough I don't think it's safe to put them in the fridge and I desperately need to go to bed.
