I was watching What About Bob? recently and I think there's a bit of Richard Dreyfuss in Dennis.
I kept noticing how Dr. Leo Marvin started to remind me more and more of Dennis as he descended into madness. His delivery of "I'm on vacation!" in particular has strong golden god energy.
[homemade] 1/3lb patty w/ pickled red onions, pickled peppers, Colby Jack, Kewpie, garlic confit and fries
Kind of my standard burger these days.
I went traditional with my last post, but decided to go full-American with Staffordshire Oatcakes.
Hope this isn't too offensive 😅
This time I went with shredded cheddar on the base, home fries, scrambled eggs, bacon, avocado, pickled red onions, and a HP/Sriracha sauce.
Sauce:
- 2tbsp Mayo
- 1tbsp HP Sauce
- 1tbsp Sriracha
- 1tsp Worcestershire
- 3 cloves garlic confit
- 1 tsp rice vinegar
American attempts traditional Staffordshire Oatcakes
I recently posted my attempt at a Staffordshire Foundry Bap and was told overwhelmingly that I needed to try the oatcakes.
I think I did everything justice here and they came out delicious! Not too dissimilar to a normal American pancake just thinner and a little more robust. Better for savory options too.
How'd I do?
1/3lb burger w/ Colby Jack, Guac, Black Forest Bacon, and Brussels Sprouts.
1/3lb burg with steamed Kingdom Cheddar, Kewpie, Colman's mustard, fresh Kraut, pickled red onions, home made fries.
American attempts a traditional Staffordshire foundry bap
I recently learned about Staffordshire foundry baps and wanted to do this important working man’s food justice.
As I understand it, they started in foundry canteens: beef patties steamed over “under-onions,” then served on a heavily floured white bap with mature cheddar, brown pickle, and English mustard.
I used the Ted’s-style steaming method, poured melted Kingdom cheddar over the patty, and added Colman’s. I couldn’t find Branston, so I made a rough brown pickle with relish, Worcestershire, and malt vinegar.
I also went Lemmy-style: brown sauce under the beef and crushed pork scratchings over the cheese.
“Mustard above, pickle below; wrap it tight and off you go.”
Served with thick chips, malt vinegar, and a Samuel Smith’s Nut Brown Ale. Hopefully I’ve done the foundry workers of Staffordshire justice.
Just a 7oz burg w/ cheddar, PRO, and Brussels sprouts.
1/3lb w/ sharp cheddar, bacon, pickled red onions, white onion, lettuce, tomato, burger sauce, homemade brioche.
3h smoked meatloaf w/ Jalapeño Jack on a Hawaiian roll.
This might be my favorite food item lol.
