Here is my 2021 diesel high country with less than 22,000 miles on it. I baby this thing like there is no tomorrow. If it looks like it may rain outside, this truck stays in the garage. It only gets wet when I’m out camping and have no other choice. I absolutely love this beast!

Just found this sub

Loved tearing this down and rebuilding with my kids. Then taught them to drive it, way before they had theirs licenses. Kinds cool to have kids that can drive stick when a lot of adults don’t even know how to nowadays.

Any takers on spilling the beans? Pun intended.

I’ll start…

Here is my Beer-Battered Onion Ring recipe

INGREDIENTS
• 2 large sweet onions (Vidalia or yellow)
• 1½ cups all-purpose flour
• ½ cup cornstarch
• 1 tsp baking powder
• 1 tsp paprika
• ½ tsp garlic powder
• ½ tsp salt
• ½ tsp black pepper
• 1½ cups cold beer (lager works best)
• Oil for frying (vegetable or canola)
- Optional dredge (extra crunch):
• ½ cup flour mixed with a pinch of salt
INSTRUCTIONS

  1. Prep the onions
Slice onions into thick rings (about ½ inch).
Separate into rings and set aside.
  2. Make the batter
In a bowl, whisk flour, cornstarch, baking powder, and spices. Slowly add cold beer, whisking until smooth. Batter should be thick enough to coat but still drip slowly.
  3. Heat oil
Heat oil to 350°F (175°C) in a deep pot.
  4. Coat & fry
Lightly dust onion rings in the dry flour mix (optional but helps batter stick).
Dip into batter, let excess drip off Fry in batches for 2-3 minutes, turning until golden brown.
  5. Drain
Remove and place on a rack
    (not paper towels-keeps them crisp).
