Saw our man Willie and crew this week at his traveling outlaw circus. Such an amazing line up, top to bottom. Dan Was, Sierra Hull, Stephen Wilson Jr. (holy smokes he’s good), Lukas Nelson, the impeccable Avetts and the legend himself, Mickey Raphael. Well, and Willie, sweet ol’ Mr. Nelson is something far beyond a legend.
Go see them. Immediately!
Delicious bounty from last fall, Utah elk loin and Missouri whitetail deer bites
The deer bites are an epic way to use roasts and other less tender cuts. Simple recipe - cut in bite size chucks, wrap in thin bacon then marinate in a 50/50 mixture of Franks Red Hot and Worcestershire sauce. Grill to medium rare (128 degrees). There are never leftovers.
Nothing like jumping in the lake with a 3-weight, a popper and your favorite libation after being on a tractor for 4-hours. Apologies for the man-tots.
I reverse seared tri-tip to 123 degrees on the smoker, cooled off, then seared on the Blackstone at full throttle for ~2 minutes per side. So easy!
I rub lightly with olive oil, then use Santa Maria seasoning, leave it in the fridge for about three hours uncovered to dry brine.
Absolutely mouthwatering good!
Here’s a little tip that helps me, like most know, you have slice tri-tip against the grain, before I put the seasoning on, I will lightly score the edge of the meat with the grain, it holds up well after the cook and sear. As an added benefit, those little grooves really hold the seasoning!

With the extreme heat here in the midwest, giving the trout a reprieve and spent last evening living it up on my 3-acre pond with my 3-weight.
In just a few hours, I landed 15 bluegill between one and 2 pounds These are not hybrid bluegill, but pure northern strain that are supplementally fed protein pellets. The pond record is 2.14 pounds.
Tough to beat!

Oh my God, could this movie be any worse? Boring, predictable, anticlimactic, etc.. I gave it a go with those three headline actors, regrettably. The only redeeming quality was some great cinematic shots, but even then such wasted talent.
Massive fella on a popper on a 3-weight. Full on fist fight on that lighter weight rod. I’m pretty sure he was close to 2 pounds.
I was able to catch our man Oteil & Friends last night in St Louis. He and this solid group of players are definitely keeping the bus rolling.
You can tell he is having fun. The show was a great mix of Allman Brothers cuts, original material and Dead goodness.
