First summer actually smoking anything. Have to say it’s my favorite hobby.
Some may call it heresy but I’ve been using a pellet smoker with great results.

First time doing pork ribs. Tried the 3-2-1 method. Came out pretty good.

She will be missed.

Had revolver fever and needed to get my fix.

Should’ve let them stay on a little longer for the bacon but otherwise great.

Overnight low and slow. Came out great.

Overnight smoke on the recteq. Came out tasting great.

Pastrami came out great and taste awesome. But can anyone tell me what cause the grey in the middle? Thanks!
