Monday means red beans and rice
Adapted from this recipe: https://smokinandgrillinwitab.com/crockpot-red-beans-and-rice-slow-cooked-southern-comfort/#wprm-recipe-container-23012
Added a diced red bell pepper, a few shakes of smoked paprika, a smoked turkey leg, and extra cup of water. After the initial 6 hour cook, I mashed up some of the bean with a wooden spoon and left uncovered to cook on low for another hour. Hopefully will thicken more overnight.
Tonight’s dinner, collard greens with smoked turkey and black eyed peas
Biscuits and Spam gravy
Had a can of small biscuits and was about to make a simple white gravy when I decided to see if Spam could be used. Cooked half of a can of Spam diced in 1 tbsp of melted butter. Once it was fried, I added 2 tbsps of all purpose flower and mixed with a wooden spatula. Once the flour was mixed in, I added a cup of whole milk about 1/4 at a time and stirred until thickened. Made add another 1/2 or full cup of milk for a thinner gravy next time. Seasoned with Tony’s and black pepper.
White boy made carnitas
Cause following a simple recipe made me feel fancy. Have a lot to clean up this morning…

Pics from my tour of the Jeanie Johnston famine ship in Ireland
The Jeanie Johnston is a copy of a famine ship or coffin ship that carried Potato Famine survivors to Canada and the US. It was famous as a “miracle ship” since on 16 voyages they never lost a passenger. That was due to the owner hiring a doctor to monitor passenger and crew health, and they had a policy of not overcrowding as much as the other ships (some had bunk beds in groups of 3 or 4).
Male passengers who were old enough helped work the ship, and the women were in charge of cooking the food. On one voyage, they allowed a pregnant woman on who gave birth. The captain and ship’s crew donated 10% of their weekly rations to the mother and child.
Great tour if you’re ever in Dublin!
Ideas for leftover soup base packets?
Ended up with extra packets from my Shin ramen. Have made a sauce before with them using sriacha and peanut butter, and if I needed spicy broth I can make it. Any unique or fun ideas on how to make use of these? Besides self defense pocket sand.
Was told law students should try to have hobbies, built my first set since I was a kid
Bought this set on a lark a couple months ago from Costco. Then bought two more sets yesterday since I had a day off before getting back to studying for my last final. Decided to throw on a movie and get to building. Had fun, less tedious than my attempt to get into Gunpla again.
Halfway through law school finals, made biscuits and sausage gravy to see me through the next few days
