Tried David Chang's triple Fried recipe

I marinated in soy, sesame oil and rice wine vinegar, then the dry dredge and first fry, cool down in fridge overnight. Added vodka & club soda to dry dredge, did the second fry, added a little more vodka and soda to thin it even more, did the third fry. Insanely crispy. Could have gotten better color but it was delicious and stayed crispy for hours

Blade steaks back down to 5.99/lb

I sous vide them at 138 to help break down the connective tissue in the middle, I read somewhere that a higher temp is better for blade steaks, but next time I'd go back to 132 and just cut around the gristle. These are overdone.
