Fresh broccoli salad with cirn, peas, purple onion, green onion, colby-jack cheese & vegan bacon bits. We used Hidden Valley Ranch dressing for this. Light & crisp.
This is whole wheat Bollilo bread, rotisserie chicken, lettuce, tomato, pepperoncini & jalapeno slices with mayo & mustard.
I made Italian wedding soup with spinach, carrot, orzo and handmade chicken meatballs. A nice treat. Tons of leftovers.
I made a Chnese chicken salad including shredded rotisserie chicken, 2 cabbages, cucumber, green onion & jalapeño. Sauce is olive oil Mayo, oyster sauce & sriracha mayo. Obviously served with both sesame seeds & nori snack seaweed.
I made two different types of crispy spring rolls for lunch. One has chopped rotisserie chicken, Kinder's cowboy butter seasoning & chili powder, the other has chopped shrimp & old bay. Both have fresh parsley & green onions.
I wet the spring roll wraps to fold these into tiny burritos 😆
I air fried for 12 minutes, we are dipping in sriracha mayo.

I made a hearty rigatoni casserole with cajun chicken, broccoli, spinach, several cheeses and lots of roux. I can't even describe how good this is. Words fail.

I made a chopped romain & radicchio salad with imitation crab, a spiral cut cucumber, tomatoes, bacon, sunflower seeds, pepitas & crispy fried jalapenos. This is my kind of meal.

For Fathers Day I made a delicious chicken meatloaf, loaded with alfredo, parmesan and mozarella cheeses. Served beside steamed, browned, red potatoes & corn. Everyone chowed down.

It was 'use up all the leftovers' night here at home. I had potatoes, carrots, celery onion plus leftover roasted turkey & gravy to use from my 'Thanksgiving in June' night.

I messed around and stuffed shrimp & imitation crab with mayo & green onions plus seasonings into Hawaiian rolls that I had hollowed out. Baked for 25 minutes and boom. These were actually damn good.

I handmade a gorgeous spaghetti sauce tonight from scratch, and added a pound of chopped shrimp. Served over palmini for myself, pasta for the kids. Dang it this was good.

I made a strawberry cheesecake with handmade graham cracker crust, topped with glazed raspberries & blackberries. Kids had whipped cream, of course.
