Thoughts on making sparkling wine out of everything (Shiraz, Riesling, Alvarinho)
What do you think about this trend?
I’ve had a few of these wines, and aside from being seriously overpriced, they usually lacked the structure and depth their still counterparts have. Is this just a passing fad or something more?
