made this 15-minute creamy garlic shrimp last night because it's too hot to use the oven lol absolute lifesaver

What you need:

1/2 lb shrimp (peeled & deveined)

1/2 tbsp butter

1/2 small onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup half & half (or heavy cream if you want it thicker)

1/4 cup grated parmesan

big handful of spinach

salt, paprika, black pepper

How to make it:

Toss the shrimp with a bit of salt and paprika. Melt the butter in a skillet on med-high. Sear them for literally 1 minute per side just till they start turning pink, then get them OUT of the pan. If you leave them in they’ll turn into rubber later.

Lower heat to medium. Throw in the onion, cook for like 2-3 mins till soft, then add the garlic for about 30 seconds. Don't burn the garlic or it goes bitter.

Add the halved tomatoes. Let them blister and release their juices for a couple mins. Use a wooden spoon to scrape up all those good shrimp bits stuck to the bottom of the pan.

Pour in the half & half and drop the heat to low so the dairy doesn't split. Simmer for 2 mins, then stir in the parm till it melts into the sauce.

Toss the spinach in till it wilts, then put the shrimp back in (plus any juices on the plate) for 1 minute just to heat through. Crack some black pepper on top and you're done.

I ate this with thick toasted bread to mop up the sauce, but it would be killer over pasta too.
