Apple Turnovers

Had some big cooking fails today, but these apple turnovers weren’t one of them.

They are super easy and taste great. I love anything in puff pastry 🥐

2 T Brown Sugar
3/4 tsp Cinnamon
2 Apples chopped in small chunks

Mix apples, brown sugar and cinnamon in a bowl and set aside.

Oven on to 450
Parchment on large baking sheet

Roll out your puff pastry (I bought vegan puff, still working on bread skills!!!)
Cut into 4x4 inch squares (12 squares)
Put 2 Tablespoons of apple mixture into each
Fold diagonal, crimp edges with fork and use a sharp knife to put three cuts on the top of each turnover.

Place on baking sheet
Brush on a plant based milk and sprinkle with white sugar.

Bake 12-15 minutes till puffed and golden….

Vegan Fail

I spent much time trying to make a roasted pepper cheese only to become a massive curdle fail!

Many pots, pans, blender and utensils were a casualty of this fiasco!!!

Ended up making my go to Mac and cheese as I was starving by this time….

Just needed to vent…

Tofu

I am looking for some recommendations on tofu. Most of my tofu, even firm, is not really firm. I see these recipes where they slice or grate tofu. I am looking for firm or extra firm tofu that is organic and quality.

I want to try some new tofu recipes that use the more firm tofu.

Any recommendations?

Mini Sliders

I’m couldn’t find big mushrooms and had everything else so I used what I had. You really need mushrooms just a bit larger than your slider bun.

Also, didn’t have cocktail toothpicks either. Had to use a bamboo skewer….

Still, really tasty!

Vegan Breakfast Burrito

Had leftover tofu scramble so I made a breakfast burrito.
The pictures pretty much give the recipe details.

I was so hungry, I forgot to melt the cheese—still good, but better with melted cheese.

Light was a bit weird, but I was focused on munching…

One day to soak the cashews for the cheese

Unfortunately, you have to let the cashews sit overnight before making the cheese. Then, the cheese has to sit overnight before making the scones…

Yummy. Had two with some fresh cantaloupe.

Pancake Porn

Vegan pancakes with pecans and dried blueberries. My fresh seemed to have turned…😳 hence the dried option. Still good though.

[Homemade] Quick Tomato Basil Pasta

Quick Meal…

Recipe:
Cut cherry tomatoes in half
Place on a baking sheet and drizzle with olive oil and balsamic vinegar.
Roast or broil till just a hint of color on top. Set aside.

Boil water for pasta
Cook Penne (or your favorite pasta)
Drain and set aside

Smash 2-3 cloves of garlic
Chop up fresh basil (about 12 leaves)
In a large skillet, put a tablespoon of olive oil
Heat and put the garlic in and sauté till the garlic is tender.

Throw in the pasta, tomatoes and half the basil. Stir and cook till blended. Place on a plate, sprinkle the rest of the basil over the pasta. Top with vegan Parmesan cheese.

Enjoy

Ginger Seitan Beef

My first stab at seitan. It was a bit of a challenge. The recipe called 1/2 cup water, but my flour was still not mixed in so I had to add more water. This resulted in over mixing and chewy meat.

It tasted good, just too chewy. I got the recipe from Sam Turnbull’s cookbook “Craving Vegan.”

My kitchen looked like a bomb went off…many steps and many pots.
