Now the thing is with my shyness seeing myself on camera and I have an issue where my teeth do not move when I speak. Most people don't have an issue though I have gotten a lot of negative feedback about it. What is your advice for any quick fixes before the interview?

So I've made seitan twice now with the wash flour method. The first time I let the original dough sit for a few hours not overnight. The second time I let it sit overnight. For some reason the wheat starch acted differently when I was using it. It appears less gummy when I steam it. I tried asking google but the answer focuses on the gluten. I'm curious about the starch. Anyone have a reason why it would be more gummy when the dough ball rests for a few hours vs. over night?

So I made seitan for the very first time yesterday after wanting to make it since I was a teenager. I'm over 30 now. Anyways I made seitan and sauteed it with some spices, oil, salt, etc and tasted it. Ugh it has the gamey taste of chicken. Gonna have to figure out how to eat this.

I'm focusing on losing weight though I just got a scale and found I was a few pounds less than I was last time I weighed myself. Yesterday I binged on high calorie high carb foods and am up in weight today. So today I'm focusing on sticking to a lower calorie intake overall as I have been doing.
I have been doing a lot better on not getting fast food simply because I don't want to fit it in my expenses anymore.
How do I keep myself from wanting carbs though? Is there a vitamin or mineral that helps this?

So a few days ago someone posted about their besan bread. Immediately I sought out how to make it. Here it is. Not sure why it crisped up on the bottom and stayed a custard like consistency on top. Though I might be able to make a vegan custard with besan. I'll have to research this.
I know in the past I used some regular flour with besan and some spices and fried up some very tasty savory pancakes.
The most questionable vegan thing in this is the less than 1% sugar ingredient listed on the jarred sauce I used. Will get better as I get higher paying jobs.
