Vegan Chicken Nuggets from Scratch

I have searched the internet far and wide for a vegan chicken nugget recipe that was pantry friendly, didn’t include beans, tofu, pea protein, and etc. I couldn’t find one so I MADE MY OWN! I present to you my McDonald’s McNuggets DUPE! The only thing not included in the MFP ingredients are the extra seasonings I added to taste (pepper, onion powder, garlic powder, poultry seasoning, paprika).

What important here is that I blended my TVP to a fine powder and added it into my wet ingredients before I added my VWG. I baked at 400°F for 20 minutes, flipping halfway. If you have any questions, I’m happy to answer them! If you decide to try my recipe, please enjoy!

* I don’t know how these would turn out if fried.
** I’m in the process of freezing them to see how they translate as a quick air fryer food, or reheating in the oven. I will update this post with what I find.

Hamburger Buns

I made some hamburger buns for a gathering tomorrow, and I made some gluten free buns as well! They’re also vegan! I’m very curious to see how the texture of the gluten free buns will be. I’ve made lots of gluten free desserts before, but this is my first yeasted gluten free bread.

Obsessed with Pickled Onions

This jar was full on Sunday morning. It’s Monday night and they’re gone. It took me less than a minute to slice and refill the jar, so I’m loaded once more. I plan on getting so many more onions at the farmers market this weekend. I can’t believe I’ve lived this long without them. This is your sign to start picking your onions!

Creamy Cinnamon Overnight Oats

I’ve never enjoyed overnight oats so much. Adding soy milk instead of water really added something special to my simple brown sugar cinnamon oatmeal! I think I’ll add chia seeds tomorrow to see if I like it. Blending is also an option I’d like to consider

Burger

I learned this week that I really don’t like store bought fake meats. I was at a hang out this weekend and my friends were kind enough to grill me some plant based burgers (before the beef ones went on the grill too!) and I took the extras home. I eat a WFPB diet 99.6% of the time, so I normally don’t eat stuff like this. What I found is that it mimics beef just too closely and it makes me feel icky. Like the taste is way too close for my liking and it’s been almost 10 years since I’ve eaten meat. I think it’s the irony/heme that some companies use in their products.

Anyways, here’s my double cheeseburger with onions (I wanted to get rid of them which is why I made a double cheeseburger. I’ll be back to my own homemade meals tomorrow 😭 💜).

Also, just to clear up any questions that may arise, I did see the packing so I know for sure these weren’t beef. Thankfully I have great friends who wouldn’t do that to me.

Tofu Scramble

I can’t remember the last time I had tofu! I’ve been waring nothing but seitan for the past month or so, so this is great. I tried a new cheese too. It melts really nice

How Long Will They Last?

So I’m running low on VWG which is currently my main protein source. I was going to order a 50lb bulk bag, but because it’s supposed to be raining nonstop for the next week and a half I don’t think it’s a smart idea. So now I’m trying to explore more options.

I’m interested in buying soy curls, but I don’t know if it’ll be worth it for me. I weight lift and try to consume anywhere from 100g-120g of protein a day. In my case, would it be worth it, and how long do you think the 12lb batch will last me if I were to invest in it?

5 Yards of Fabric

I’ve never dyed fabric before so I wanted to get some guidance. I have 5 yards of this 55% linen / 45% cotton fabric that’s a light blue. The plan is to make a matching lounge set. The pictures I added unfortunately don’t provide the best depiction of the true color. I have two bottles of Rit Dye (1 charcoal and 1 black). I’m wanting to go for a dark charcoal or black. I’m not too picky, as I know that most shades of grey and black work well for me.

Do I have enough dye? How much do I really need? (I wish Rit included yardage information alongside garment information!)
Is it possible to dye it with room temperature water given the fact that it’s all natural fibers?

I’d appreciate any and all advice. Thanks!
