Today's hot quick oatmeal and add-ins

An enormous amount of quick hot oatmeal for brunch that contains a calorie count of 771 - but after my 5.75 mile brisk walk this morning...it's well deserved.

Add-ins are 50g blueberries, 20g vanilla isolate whey protein powder, two Zespri SunGold kiwis, 20g raisins and cranberries, tablespoon chia seeds, nutmeg and some honey😃

Had this meal just now and it was delicious

MY BACKGROUND:

Age 69 female 5ft 6ins / HW286lbs-20st6lbs in my 40s / SW160lbs-11st6lbs in Nov 2025 / GW 131lbs-9st5lbs in Mar 2026 / CW124lbs-8st12lbs / 2.5mg on maintenance taking every 25 days (never had to go higher than 2.5mg)

I live on my own and sometimes can't be bothered cooking meals from scratch...so I shop mainly at Aldi, Sainsbury's and Iceland as they stock really tasty healthy ready-made made meals that you can bulk up by adding loads of vegetables to.

Entire calorie content was 510 / carbs 64g / fat 13g / protein 31g

Blueberry & Apple Baked Oats

One for breakfast and one for dessert after my evening meal.

BLUEBERRY & APPLE BAKED OATS

Preheat oven 175⁰C

Lightly grease 2 small OR a medium oven proof dish (mine are 640ml /127mm x 82mm / 5in x 3¼in)

I USE TWO DISHES as one is for my breakfast and the other one a dessert after my evening meal which I'll top with Greek fat free yogurt, vanilla protein powder, chia seeds and peanut butter.

INGREDIENTS:

60g rolled oats (blended to flour)

1 tsp nutmeg

20g vanilla isolate whey protein

powder

½ tsp baking powder

160g 0% fat free Greek yogurt

2 tsp runny honey

1 egg

1 tsp vanilla extract

GENTLY FOLD IN:

130g apple grated

70g blueberries + 16g chocolate

drops (keeping some for the top)

Let it stand for 15 minutes

Bake for 35 to 40 minutes until brown and a toothpick or knife inserted into the center comes out clean or with only a few moist crumbs, not wet batter.

Leave to cool as the longer you leave to cool the more it sets.

Chocolate Cookie Protein & Raspberry Overnight Weetabix

I don't like overnight oats but this overnight Weetabix dish is delicious. I have one for breakfast and the other one as a dessert after my evening meal.

MAKES 2 DISHES

(each dish - Cal 350, Carbs 43g, Fat 7g, Protein 27g)

*optional ingredients

DRY INGREDIENTS MIXED:

3 finely crushed Weetabix / 1 tbps chia seeds / *1 tsp desiccated coconut / ½ tsp ground nutmeg or cinnamon / 25g raisins & cranberries / *5g chocolate drops / 10g chocolate cookie protein powder / *1 tsp cacao powder

DIVIDE INTO TWO DISHES (mine are 640ml /127mm x 82mm / 5in x 3¼in) and pack down with the back of a spoon.

​

POUR OVER approximately 120ml skimmed milk mixed with 1 tsp vanilla extract - just enough to soak through but not settling on top.

​

PUT IN FRIDGE WHILE YOU MAKE TOPPING.

​

TOPPING

Mix together 180g 0% fat free authentic Greek yogurt / 20g chocolate cookie protein powder / *1 tsp desiccated coconut / 20g raspberries (fresh or defrosted).

​

SPREAD ON TOP OF THE TWO DISHES + add *5g chocolate drops.

​

LEAVE IN THE FRIDGE FOR AT LEAST 6 HOURS...or better still overnight.

Carrot Cake Baked Oats

This recipe was provided by another Reddit poster (PinkandTwinkly) and it's delicious.

I added a few more things...125g of grated carrot INSTEAD of 100g as I didn't want to waste it 😃, 30g dried raisins and cranberries INSTEAD of sultanas, 2tsp of desiccated coconut, 20g of vanilla isolate whey protein powder, vanilla extract and a bit more extra nutmeg, 2 teaspoons of runny honey INSTEAD of Stevia.

My extra ingredients has made the calorie and protein counts a bit more higher.

I'm having one for breakfast and the other for a dessert with a vanilla greek yogurt and chia seeds topping.

The nutritional table is for the TWO dishes.

Breakfast and a Dessert

BACKGROUND

68/F - gone past reaching my 'goal' weight (achieved in March this year) and now I'm 9st/126lbs on maintenance. Trying very hard to up my daily calorie intake as my food suppression is still high even though I'm taking 2.5mg every 25 days (I've never had to go any higher than 2.5mg) and soon to dose once a month...and eventually stop.

Had one of these for breakfast (345 calories) and will have the other one as a dessert this evening (345 calories)

CHOCOLATE PROTEIN PUDDING RASPBERRY COCONUT OVERNIGHT WEETABIX

DRY INGREDIENTS:

3 crushed Weetabix biscuits mixed with ½ tsp ground nutmeg + 20g raisins and cranberries + 25g isolate whey protein powder + 7g desiccated coconut + 1 tbsp chia seeds + 12g chocolate drops (keep some to scatter on to topping) - if using 2 dishes, spread this mixture evenly into each one.

THEN POUR OVER:

110ml skimmed milk mixed with 1 tsp vanilla extract and pack down (add a little more milk if not enough)

LEAVE IN FRIDGE WHILE MAKING TOPPING

TOPPING:

Gently fold in 40g of raspberries (frozen or fresh) with 200g Chocolate Protein Pudding and then spread on top of Weetabix mix - scatter over remaining chocolate drops - cover and place in fridge for at least 5 hours...or better still overnight.

I've also made this with 0% fat free Strawberry Greek yogurt.

My variation of Banana & Blueberry Baked Oats

I had one for breakfast (437 calories) and I'll have the other one as a dessert after my evening meal with a topping of more Greek yogurt, vanilla protein powder and chia seeds.

Banana, Blueberry, Coconut Chocolate, Chia Seeds Baked Oats

Preheat oven 175⁰C

Lightly grease oven proof dish (I used 2 small dishes)

*optional ingredients

70g rolled oats (blended to make

flour)

½ tsp ground nutmeg

25g vanilla isolate whey protein

powder*

½ tsp baking powder

1 tbsp chia seeds*

1 mashed banana mixed with:

80g 0% fat free Greek yogurt

2 tsp runny honey

1 beaten egg

1 tsp vanilla extract

(ADD THIS TO DRY INGREDIENTS)

Gently fold in:

18g milk/or dark chocolate drops*

70g frozen or fresh blueberries (keeping some to scatter on top)

Let it stand for 15 minutes

Bake for 30 to 35 minutes until brown

Insert a toothpick or knife into the center; it should come out clean or with only a few moist crumbs.

Leave to cool as the longer you leave to cool the more it sets.
